Three Meals from Two Packages of Chicken Breasts!!!!!

Now that I'm back in graduate school, time will be very limited. So, today I put six chicken breasts (boneless, skinless) in a Dutch oven with salt and lots of black pepper and water. While they cooked, I prepared four cups of rice (made with ff chicken broth...2 cups rice to 2 cups liquid). Then I began! Cheesy Chicken Casserole Serves - 8 Points - 5 2 cups cooked rice 2 cups reduced fat cheddar cheese 2 cups chopped cooked chicken breast 12 ounces fat-free evaporated milk 1/2 cup egg substitute 2 Tablespoons light margarine, melted salt and pepper, to taste Methods/steps Lightly grease a 13" x 9" baking dish. Combine all ingredients. Mix well. Can be covered with foil at this point and frozen or refrigerated. Bake 45 minutes in a 350 degree oven. King Ranch Chicken Casserole Serves - 6 Points - 4 1 10 oz. can chicken breast, drained 1 can 98% fat free cream of mushroom soup 1 can 98% fat free cream of chicken soup 1 can Rotel tomatoes 8 corn tortillas, cut into fourths 1 cup fat free shredded cheddar 1 small onion, chopped 4 cloves garlic, minced 1/2 cup celery, chopped salt and pepper to taste Saute onion, garlic and celery in a nonstick skillet coated with cooking spray until tender. Add soups, Rotel tomatoes and chicken; heat and mix thoroughly. Add salt and pepper to taste. Spray 9x13 baking dish with cooking spray. Layer 1/2 of tortillas in bottom of dish. Pour 1/2 of soup mixture over tortillas. Sprinkle 1/2 of shredded cheese over soup mixture. Repeat layers ending with cheese. Cover with foil. Can be frozen or refrigerated at this point Bake at 350 degrees for 40 minutes. Uncover and cook additional 10 minutes. Let stand for 5 minutes before serving. Chicken Stroganoff Divan 6 servings @ 6 points each 2 cups of chicken, chopped 2 cups broccoli 2 cups rice can of lf cream of mushroom soup 8 oz. light sour cream 1 packet of dry onion soup mix Parmesan cheese Spray a baking dish with Pam. Mix all the ingredients together except the Parmesan cheese. Pour into baking dish and top with a light sprinkling of Parmesan cheese. Cover with foil. Can be frozen or refrigerated at this point. Bake at 350 degrees for 35 minutes; remove foil and bake another 10-15 minutes until top is browned. AND...there should be leftovers for lunches!

OH MY GOSH! I love this sleeve! I truly do. I just eat until I'm full...which is anywhere from 1/4 cup to 1/2 cup several times a day. Sometimes it takes me THREE rounds to eat my dinner! Tonight, for instance, I'm skipping my bedtime snack. I'm still so full from dinner!
