Cottage cheese...what do you do with it?
I do all the things that Nancy and Amy posted. I also make a "stove top" apple pie filling and put it over cottage cheese for breakfast. I mix a little in my oatmeal for extra protein. I puree (alone or some l/f ricotta or marscapone) add an egg and salt and pepper. Put this in a 4 oz ramekin top with pasta sauce and a little parmesean cheese and bake for about 30 minutes. It replaces lasagna for me. Hmmm...mix french vanilla splenda with cottage cheese, add bluberries, and half of a graham cracker cumlbed up, viola, blueberry cheesecake.
