I know I've posted this before, but it's so good...you guys have to try this. The hardest part is getting the cans open!
1 lb. lean ground beef, browned with diced onion
Then add:
1 lg. jar Pace Picante
1 can Rotel (tomatoes/peppers)
1 can diced tomatoes
1 can corn
1 can kidney beans (drained)
1 pinto beans (drained)
1 can black beans (drained)
1 package Taco seasoning
cup or so of water, depending on how soupy you want it
You don't need to add anything else, but I season with dried cilantro and some cumin, salt and pepper.
Simmer for 1 hour or all day in the crockpot. I sometimes add another 1/2 lb. of meat, and another can of pinto beans for a bigger batch.
Serve with a dollop of light or FF sour cream, and/or shredded cheese, and a few crumbled tortilla chips.

1 # of ground beef/turkey or pre-cooked fajita chicken
1 can of white corn
1 can of yellow corn
1 can of chili beans
1 can of pinto beans
1 can of black beans rinsed
3 14 oz. cans of tomatoes--I use one can of Rotel, one can of diced and one can of stewed
1 small onion chopped (I cook 1/2 with the meat)
1 pkg of Ranch dressing mix
1 can of green chilis
Cook the meat. Throw everything together in the pot. I always double the batch and then freeze individual containers. I eat it for lunch almost every day.
