We need healthy recipes!
Someone mentioned on Phyllis's thread that they would like to see healthy recipes posted. I am all for that. Phyllis and Tami T always have great recipe ideas and I would love to see them post a new one daily. I'm sure we all have recipes that are boring to us, but would be new and exciting to someone else. So post away...even if it's really simple and you are sure everyone has the recipe. We might be surprised.
One of my favorites doesn't have a name, but goes like this:
Boneless chicken breasts or tenders
Can of tomato sauce
Can of mushrooms
Onions/peppers/ garlilc chopped
Layer the chicken in a 13X9 pan, pour the tom sauce over it. Add garlic, onions, peppers, mushrooms (chopped) and any seasoning you might like. (Sometimes I cut potatoes in two and add them around the edges) Bake until chicken is done. Simple, but even my pickiest eaters like it.
Ok, here goes. I posted this a while back so I had it written down. Problem with me is I don't use recipes and I rarely write down what I did to make something. But, I will make an effort to write things down and share as a NY resolution.
Southwest Meatloaf
2 stalks of celery
1 med sweet onion
1 poblano pepper
Handful of fresh cilantro
2oz extra sharp cheddar (optional)
Couple squirts of catsup
Dash of Worchester
1 lb of lean ground beef, pork, turkey or chicken
1 egg or two egg whites
1/3 cup of oat bran or ½ cup of oatmeal
1 t. chili powder
Salt and pepper to taste.
Combine the first 5 ingredient in a food processor and until evenly chopped. Mix with the rest of the ingredients until evenly blended. Form into a loaf. Bake in a suitable baking pan covered with foil for about 1.25 hrs on 325 heat. Pour off the grease form the bottom of the pan if any. Top with a can of rotel and continue to cook uncovered for another 15-20 mins.
This would be perfect with rice if you can eat it. Serve with some nice steamed veggies of your choice. Top everything with the rotel sauce. Makes 4-6 or servings,

The veggies and cheese ( first five ingredients) make a great chopped salad. Just mix with some Ranch dressing. To make a meal out of the salad you could serve it over some ground meat or chop up some shrimp and add. Don't deny yourself a slice or two of avocado on the side . I would guess that the amount of ingredient listed would make about 4 or more salad servings\ here goes.
Both of those sound so good, I'll try them both!~ I have a real easy one, I just love! Also, no name, I usually don't measure, , like Phyllis, and mine, are almost always just a little different the next time! ha
Tear heavy duty foil, big enough for a good sized packet.
Spray each with Pam, or Equiv.
1 chicken breast,seasoned with what you want, then, top with slices, of zuchinni, thin sliced red peppers, onions, yellow squash, and I like fresh mushrooms. pour a little tomatoe sauce over all, and seal packets, bake at 350, for approx. 1/2 hr. be careful opening the foil! This is good, with any carb, but I eat it with a little brown rice. I have thrown in a little eggplant to the mix, too. Actually, any veggie would be good, too! ha

BROILED SCALLOPS
1 lb. large bay scallops
2T. butter
1T. olive oil
generous shaking of garlic salt
juice of 1 or 2 lemons (2T.)
Put butter and olive oil in glass dish and put into 450 degree oven. When bubbly, add the scallops (they will sizzle) and shake on garlic salt. Squeeze lemon juice over. Return to oven, top rack, and turn up to broil. 8-10 minutes.

BLACK AND BLUE TALAPIA
6 small or 4 large talapia filets
1-2 T. butter
1T. olive oil
blue cheese
Paul Prudhome cajun blackening spice, salt and pepper to taste
Heat butter and olive oil in large skillet. Coat fish filets with blackening spice. If you like it really spicy, you can add cayenne pepper too. Filets should be completely covered with spice. Put into skillet. 2 minutes on each side. When done, sprinkle with blue cheese crumbles and put into broiler until melted.

ROASTED TOMATOES
Halve roma tomatoes and scoop out centers leaving a generous shell of tomato. Place on baking sheet.
Into tomatoes, put chopped, fresh garlic, salt, pepper, bit of sugar, drizzle of olive oil, and balsamic vinegar. Roast in a 400 degree oven 20-25 minutes.
Remove and sprinkle with fresh grated parmesan. Return to oven until melted.
After removing from oven again, sprinkle with fresh basil shreds.
This is GREAT with fish and a bit of wild rice.

TURKEY ROLL-UPS
These are great for lunches!
Deli turkey slices
light cream cheese, or whipped cream cheese
diced green olives
pickle stackers
Onto turkey slices, spread thin layer of cream cheese. Sprinkle a few chopped green olives and a pickle slice. Roll up and secure with toothpick.
I make these the night before and they are great for lunch the next day
VARIATION
Turkey slice, spread with cream cheese, few sun dried tomatoes. Roll up.
Hey gang, how can we keep a recipe thread at the top. The Discovery Health web page has a meal plan with recipes. I will mosey over there and pick out a good one to post. But because of the format of this board we may have to do a daily post.
Any body have any ideas about how to keep a recipe post alive.
