Low Carb Whoopie Pies

Kimkins Whoopie PiesMakes 12 Cookies or 6 Pies

1 bag Skinny Dip Angel Hair
2 large egg whites
3/4 cup Cool Whip Lite, very cold
1/3 cup unsweetened cocoa powder
1 tablespoon Splenda for Baking
1/2 teaspoon baking powder
1/8 teaspoon baking soda
pinch of salt

Preheat oven to 375 F. Cover baking sheet with foil and treat with cooking spray or use a Silpat liner.

Rinse noodles, drain and pat dry with paper towels. Heat a large nonstick skillet. Add noodles to the skillet and “dry fry” until they begin to squeak and shrink a bit, about 2-3 minutes, then let cool. Place noodles in a food processor and blend 2 minutes, or until noodles look like transparent gel. Add rest of ingredients. Process until well mixed. Chill in the fridge 1 hour.

Drop mixture by teaspoonfuls on to cookie sheet to make 12 cookies. Gently pat down to flatten them a bit. Bake 10 minutes, then remove and let cool 5 minutes before eating.  To make whoopie pies spread 1 tablespoon Cool Whip Lite on one cookie. Top with another cookie and eat!
