Low Carb Zuppa Toscana Soup

Zuppa Toscana Soup: Submitted by: Cosmicgirl32 | Date Added: 6 Jul 2007 Ingredients:

Makes 4 servings

4 oz ground hot Italian sausage
4 cups chicken broth
1 cup raw kale, chopped
1/2 cup onions, chopped
4 tablespoons light cream
1 teaspoon garlic powder
1/2 each teaspoon black pepper & salt

Cooking Instructions:

A Kimkins version of the Olive Garden's Zuppa Toscana soup.

In a large saucepan simply brown the sausage with the onions, drain excess fat. Add chicken broth, cream, kale and garlic powder. Simmer for 30-45 minutes to allow flavors to mingle together. Smells great while cooking!

Note: This is delicious! This is very close to Olive Garden's Zuppa Toscana soup. My husband could hardly tell the difference.
