Needing a recipe for muffins

Hi All!

Does anyone have a good recipe for pumpkin flavored muffins or apple cinnamon muffins?  My sister is planning our baby shower and would like to make muffins that I can have as well as the other guests.  I'm okay with equal/splenda in small quantaties, but would prefer something without those ingredients added.  Any ideas?

Melissa can you tolerate maltitol? If so, you can use maltitol as a sugar substitute in many of your favorite recipes.

I think you definitely have to have some level of sugar substitute in the muffins...but there are some here who have a lot more baking expertise than I!!!

Melissa - congrats on the baby :) when are you due?

I ate maltitol when I was preggo, replaces cup for cup like sugar, even caramelizes etc. If you have a Giant Store near you they should have the steel's brand. It is in a burgundy bag in the sugar aisle and costs about $15/bag.

We're due December 1st - it's coming up fast!  It's our first - we're having a boy.  I have pics on my blog (www.wlstrusttheprocess.blogspot.com) and should be posting pics from yesterday at our baby shower shortly.  Finally starting to look pregnant to other people... looks like it was just in time for pictures : ) I'll check at Giant when I go tonight to do my regular shopping.  Thanks!

Liz,

I've checked 3 Giants (Lancaster, Elizabethtown and Hershey) and can't seem to find the maltitol anywhere!?!  Do you know if all of your Giant's up by you carry it?  If so, maybe I can email the manager of our store around here and ask if they get it in.  If not, I guess I could always order it online.  I was also wondering if you had any issues with gas from the maltitol?  I did try one recipe this past week using Splenda, and the ga**** me hard within about 30 minutes (after 1 small muffin!).  This happened a bit before pregnancy, but much worse now.  Luckily, it's just pressure and not the rest of the nastiness that normally comes with gas - but the other muffins weren't worth the discomfort, so they got pitched. 

Let me know if your system had any difficulty with the maltitol.  Thanks!

Our Giants do carry it. Steels allows you to pick up at their warehouse in Lancaster too! You just have to call and order it.

I dont have much of an issue with gas from the maltitol but some people do if they have too much. It was far worse when I was pregnant.

I'm on Facebook and OH.  Someone posted this recipe a couple of weeks ago.  Unfortunately,  I can't remember who posted it or where she posted it.  But, I did save it and it even includes the nutritional values.  It's wls friendly.  I hope it helps.


PUMPKIN MINI MUFFINS

Muffin:

3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon cloves (ground)
1/4 teaspoon salt
1/8 teaspoon freshly grated nutmeg
3 eggs
1 cup Whey Low Granular or Splenda if that’s all you have (or sugar for those who can!)
1 teaspoon lemon juice
2/3 cup 100% pure pumpkin puree
 

Preheat oven to 350 degrees. Spray pan (I used a mini muffin pan that serves 12) with vegetable cooking spray.

In a small bowl combine flour, baking powder, baking soda, cinnamon, cloves, salt, and nutmeg. Set aside.

In a large bowl beat together the egg and WL/Splenda until thick. Beat in lemon juice and pumpkin. Fold in the flour mixture. Pour evenly into prepared pan and bake for about 15 minutes or just until muffins springs back when lightly touched.

 

Frosting:

One 8-ounce package reduced or fat free cream cheese, softened
1 cup Splenda Granular
1 teaspoon vanilla extract

In a large bowl beat the cream cheese until smooth. Beat in the Splenda and vanilla until well combined.

Please note the change in the frosting compared to the original recipe linked above. I omitted the whipped cream since we weren’t doing a roll. Using the frosting recipe above we found it to be way too sweet for us. Tasty though so I think I may cut the Splenda in half next time)

All in all I rate this a fabulous recipe. The hubby who doesn’t like anything pumpkin loved these! It yields 24 mini muffins which are the perfect size for us post-ups. The nutritional stats on these bad boys are not to bad either!

I just pulled up the group on facebook - there are 2 groups with that name.  One with over 300 members and one with 24.  Is it safe to assume you mean the one with 300+ members?
