Mock Calzone Recipe mentioned at Barix today

Serves 6-8
10 oz frozen spinach (thawed and squeezed dry)
10 oz Hunt's Zesty & Spicy spaghetti sauce
1 cup 2% cottage cheese
1/2 cup Egg Beaters
2 cups Sargento Reduced Fat Italian 4 Blend cheese
spray canola oil
Preheat oven to 400 F. Treat a metal baking pan with cooking spray (shape doesn't matter).
Mix spinach, Egg Beaters, cottage cheese, 1/4 cup Italian cheese, 1/4 cup spaghetti sauce. Blend until all ingredients are incorporated to an even texture.
Turn out onto your baking dish and spread evenly so that there are no gaps or holes. Top with remaining cheese and drizzle with remaining sauce.
Bake about 20 minutes until cheese is golden and bubbly. Remove from oven and allow to cool for 15. Cut into 6 or 8 servings.
Wrap individual slices in aluminum foil and enjoy cold or at room temperature. Wonderful for lunch with a salad or as a snack.
