WONDERFUL WEDNESDAY ROLL CALL

Good morning PA! Yep, I am looking out on the golf course on this clear morning. Getting ready to head out to Jazzercise, then to look at a sofa for the guest room (from Craigslist, which is an absolute bonanza of bargains here). Then going to take a peek at a possible Christmas gift for Mike....fun stuff! He gets here tomorrow night. Have to fill in a couple of grocery items before then so we have holiday food in place.

In between I am reading a lot and catching up on some movies via
Red box.

Last night I braved the storm at Walmart and found a really cute swimsuit for $14. It's poly, not nylon, so won't last forever in the pool, but my old one used for the gym has passed it's prime, trust me.

Calm is a wonderful thing!

Good morning PA!

After work at the store, tonight is LVH Support Group, Holiday Celebration.  We bring a WLS friendly dish to share with the recipe, and certificates are given out for weight loss this year.  Unfortunately my scale has not moved from 97 lbs. all week, so I will be getting a 75 lb. weight loss certificate.

Shopping and wrapping of gifts is all done, just have to do my grocery shopping tomorrow night after work.  I am cooking the traditional fish dishes for Christmas Eve, and since our son is going to his girlfriend's on Christmas Day the two of us will probably have leftovers on Saturday.  Nice and easy relaxing day.

Hope you all have a GREAT day!

Peace,

Deb

Good Morning Lisa and PA,

Today is my last full day at work before break, YIPPEE!!!! Yesterday I baked two batches of cookies for Christmas celebration. Still have two more batches to make and a cheeseburger pie too!! That will be the project for tomorrow. I will save the cheeseburger pie for Saturday morning.

Wor****il 3:30 then TWO doctor appts, in between have to pick up Dee and figure out what to do for dinner??Last night I told Dee that she was going to have to eat what we eat or go hungry! I need to get her out of the picky eating NOW!! I made Turkey meatballs last night, she was hesitant at first but once she tasted them she liked them.  Now, I just have to stick to my guns!! HELP!

Tomorrow is a half day at work.
That is it for me!

Beth,

Is the Christmas menu ok for Dee to eat or did you want me to get something for her? I don't want her to starve.

Beth,

You are so sweet!! What is on the menu?? I will bring something for Dee if there is nothing that she will eat, but I am really trying to get her to eat new things. She is a picky eater just like Mommy was and I do not want her to end up like me!!

Love, Beth

Deb,

Here is my recipe (slightly adapted from cooking class)

Cheeseburger Pie

1 lb of lean ground beef
1/2 cup of chopped onions
1/2 cup of chopped green peppers
1/2 cup SF BBQ sauce (walden farms has a good one)
taco seasoning
pepper
oregano
garlic powder
1/3 cup spicy mustard
6 ritz crackers crushed or bread crumbs
1/4 cup egg substitute
1/4 cup milk
2 cups of shredded cheddar cheese or whatever cheese for topping

Preheat oven to 350 degrees
Brown meat then drain. Add peppers and onions. Cook several minutes. Add BBQ sauce, spicy mustard and other seasonings. Mix well. Add crackers or bread crumbs. Mix well again. Put mixture in pie plate sprayed with Pam spray.

Topping:
2 cups shredded cheese
milk
egg
a little spicy mustard and taco seasoning
mix together then add to top of meat mixture
bake in oven for about 30 minutes, when cheese is brown it is done!!

Enjoy! I wrote this out totally by memory because I make this ALL the time!!!

Beth
