My version of a tilapia taco

Good Morning!

So last night I wanted something different for dinner. Tired of beef, chicken, turkey, etc... I had some tilapia fillets in the freezer. Took them out and baked them in the oven. I added some chopped spinach with pepper and garlic, some shredded cheddar. Put it on a whole wheat tortilla shell and put it back in the oven long enough for the cheese to melt. Added some garlic hummus on top. It was pretty good!!

Just thought I would share....

Picked up some whole-wheat taco shells last night.  Can't remember the brand.  Two shells, about 120 calories and maybe 5 grams of fiber.  Not bad and crunchy.  Try some cabbage for added crunch.  That's traditional on fish tacos...

I love fish tacos and eat them a lot!  So easy to make after a long day.
