SF Brownies (somewhat healthy too!!)

As many of you know I have been having "experiments in baking" over the past couple of months. I have been trying to adapt recipes for us, especially recipes from my mom. In her prime she was a very good baker! We never had to get any baked goods at any store, my mom always had an arsenal of baked goods in her freezer in the basement. Anyway, everytime I want to feel closer to my mom I bake one of her recipes. She is still alive, but she is suffering with Alzheimers and Parkinsons and is in a nursing home with my dad. I don't know what has gotten into me with the baking craze, but it seems to give me pleasure and it is also a good stress reliever.
One of the recipes that I have had to try and try again is my mom's recipe for brownies. I went through about six batches of brownies before I found the right combination(thanks in part to Liz). So I was talking to Lynn about the recipe at support group and she wanted the recipe. I figured I would put it out for all of you to try. When I made this recipe and took a bite it instantly took me back to when I was a kid tasting my mom's brownies. Since they do contain Maltitol, I would suggest cutting the brownies into small pieces so hopefully there will be no laxative effect.
Here is the recipe for a single batch (double all ingredients if you want to make a double/thicker brownie.) With the double recipe I have had some difficulty getting the center done before the edges dry out. Susan suggested to put the double recipe in two separate pans. Haven't tried it yet, but just putting it out there.....
SF Brownies
Preheat oven to 350 degrees
3/4 cup whole wheat flour
1/2 teas. baking powder
1/2 teas. salt
1 cup maltitol
1/2 cup olive oil
3 eggs unbeaten or equivalent eggbeaters
1 teas. vanilla
1/2 cup unsweetened cocoa
1 cup chopped nuts(optional) I never add them....
Above recipe will make 1 8 x 8 square pan.
Spray pan with pam spray set aside. Put all ingredients in large bowl and mix at lowest speed until dry and wet ingredients are well mixed. Then mix at high speed for about a minute. Add brownie mixture to square pan and bake for 30 minutes. Single recipe should be checked after 15-20 minutes for doneness.
RECIPE FREEZES WELL!!!

I don't know if the syrup works. I have always used the crystals. You can go to www.netrition.com to purchase. The last time I went there there were not selling the crystals, only the powder which is similar to powdered sugar. I also found out that another website sells it. I believe it is www.bulkfoods.com . You can also check amazon for it as well.
