Looking for some easy recipes..

We are fund raising for American Diabetes Association as Nutrisystem sponsors the Diabetes Walk every October and my team is try to raise money by having a "healthy baking" sale. What can I bake that is easy and fast? I can cook but i am not much of a baker. If that makes any sense? LOL

humm - chocolate chip cookies, Karen's granola bars, fruit crisp, meringues, sugar free peanut brittle

Is it at your office?

I thought of a few more:
banana nut muffins (it doesn't get much easier then these and everyone loves them)
chocolate covered fruit
sour cream coffee cake muffins
zucchini bread

Okay receipe for banana nut muffins please? Does it require me to get major ingridents? I have a ton of ripe bananas. Does the recipe call for Splenda ?

I'll send it over later. Bananas, flour, splenda, nuts, butter - the usuals!

3 very ripe bananas 2 eggs 1/2 cup butter 1 1/2 Tablespoons buttermilk or sour cream 1 teaspoon lemon juice 1 cup diabetisweet / splenda combo (or one or the other) 2 cups flour 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1 cup chopped walnuts (optional)   Beat butter until smooth - add in bananas, sugar substitues, and milk - beat until well combined. Beat in eggs and lemon juice. Combine all dry ingredients and add slowly to banana mixture. Stir in nuts and pour into a greased loaf pan.   Bake at 350 degrees for 55-60 minutes. Let cool in pan for 10 minutes the remove from pan and cool on wire rack.

check out the world according to eggface - she has many different muffin recipes and you might find one you like - her baked items usually have a lot of ingredients though..

I checked out her recipes but they look complicated. HELP!!!! I hate not being able to bake....

Sweetie! I can cook with the best of them. But bake? Are you kidding me? All those ingredients with the flour, almond flour, special sugars........blah, blah. I HATE baking! LOL

So I feel ya. (I will sometimes buy SF items at my local market and repackage them for me to use)

Hey, My life is busy and I don't have time to make a "flour" mess in the kitchen for something that isn't going to feed my family a full dinner! LOL

When life hands you lemons, ask for tequila & salt and give me a call!

Liz's quinoa peanut butter cookies have been a BIG hit when I've made them... with WLS and non-WLS folks equally.  You can make them with or without SF choc chips, too!

Also - take a look at bariatriceating.com - there are a couple of great baking recipes on there.  I particularly love the cinnamon chocolate tea bread and the red velvet cake.
