banana nut muffins (it doesn't get much easier then these and everyone loves them)

sour cream coffee cake muffins
zucchini bread

3 very ripe bananas
2 eggs
1/2 cup butter
1 1/2 Tablespoons buttermilk or sour cream
1 teaspoon lemon juice
1 cup diabetisweet / splenda combo (or one or the other)
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup chopped walnuts (optional)
Beat butter until smooth - add in bananas, sugar substitues, and milk - beat until well combined. Beat in eggs and lemon juice. Combine all dry ingredients and add slowly to banana mixture. Stir in nuts and pour into a greased loaf pan.
Bake at 350 degrees for 55-60 minutes. Let cool in pan for 10 minutes the remove from pan and cool on wire rack.
Sweetie! I can cook with the best of them. But bake? Are you kidding me? All those ingredients with the flour, almond flour, special sugars........blah, blah. I HATE baking! LOL
So I feel ya. (I will sometimes buy SF items at my local market and repackage them for me to use)

Liz's quinoa peanut butter cookies have been a BIG hit when I've made them... with WLS and non-WLS folks equally. You can make them with or without SF choc chips, too!
Also - take a look at bariatriceating.com - there are a couple of great baking recipes on there. I particularly love the cinnamon chocolate tea bread and the red velvet cake.
