Soo sorry I missed last Saturday.  I was planning on coming but was asked to cover at last minute.   Just looked at Lisa's pictures and my mouth is watering from all the great food.

If Liz or someone else could post the recipes, I would be greatly indebted to you!!

Hope to make it to the next cooking class!

Hi Ann,

Sorry you missed cooking class too! We had a great time as usual. I am sure that Liz will post, but she just started back to work. So, it might take awhile. I posted my recipe for SF PB choc chip cookie bars. Look for the post that says SF PB choc chip cookie bars.

I do have the other recipes, so I can post them if Liz can't!!

Hope to see you next month!

Here are the ones that I brought

choc mousse

1 tub light cool whp
1/2 cup hersheys sf chocolate chips
1 tablespoon fat free half & half
microwave the chips and the half & half together in a small dish for 30 seconds - mix until smooth
fold in to the cool whip - stir until combined - chill and serve.

2 tablespoons is 2g of sugar

Asian Lettuce Wraps

1 lb. Ground Chicken
3 large Green Onions, diced
½ cup Mushrooms, chopped

½ cup broccoli slaw (chopped - optional)
2 Tablespoons Soy Sauce
1 clove Garlic – minced

¼ cup water chestnuts - optional
1/8 teaspoon Ginger (I used ginger paste)
2 Tablespoon Sherry

1 Tablespoon dark Sesame Oil
Lettuce Leaves (Green Leaf, Bibb, Boston or Iceberg)
Cashews, chopped

Sauce - I unfortunately did not measure the sauce and made it to taste but used a combination of the following:

Water

Orange juice (to temper the taste of the soy)

Soy sauce

Sherry

Natural rice vinegar

Ginger Paste

Siracha (for a little spice)

dark sesame oil (I made ~ 1.5 cups of sauce and used no more than 1tbs of sesame oil

Separate lettuce leaves. Wash dry. Set aside. Saute all ingredients together. Use a wooden spoon to break up meat. Cook meat till no pink is seen.

Divide mixture among lettuce leaves. Sprinkle with chopped nuts if desired. Drizzle with sauce and enjoy! (optional)

I don't think I brought my list home with me....but I'm sure they will be up soon enough!
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.
