Recipe Request/Suggestions

Ok all my fellow OH cooks, does anyone have any recipes they'd like to share to use up a bounty of peaches I picked last weekend? I saw Karen's recipe for Cinnamon Peach ice cream and I'd really like to try that. I was hoping someone might have one for a peach cobbler or crisp.

I take no credit for this, it was Pam's mental recipe and she gave it to me.  This is from memory and I might screw it up, but here it goes.  Basically I used it as a topping for some sugar free ice cream.  The nutritional value was minimal, but it was a delighful treat.

Cut the peaches and put in a sauce pan
Water
Splenda

Coo****il it reduces and the peaches soften.

I then added some lemon juice, cinammon and a corn starch/water mix to thicken it up a little.  Till it was all said and done, it made a nice thick, not terribly sweet peach sauce that tasted awesome over some sugar free vanilla ice cream.  I think that is all there was to the recipe.

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

humm peach cobbler - yum!!

Crisp -

I don't measure but this is what I do. Mix the peaches with a pinch of salt and a little flour. Pour in a baking dish. In a small bowl mix some oatmeal, flour, pecans, cinnamon, butter and splenda until it forms  crumbles. Sprinkle over peaches and bake about 30-40 minutes

Cobbler
MIx peaches, cinnamon, splenda and flour pour into baking dish. In another bowl mix together carb quick (or bisquick) with some milk and splenda - spoon over peaches and bake until golden brown (there is a recipe on the box I'm sure)

Karen's broiled peaches are divine too - top with some greek yogurt or ricotta cheese and they can be a dessert or breakfast. I also really like grilled peaches with pork chops or chicken breasts. Oh! or you can make a BBQ sauce with them.

Well I make an apple crisp by using apples, flour, cinnamon, splenda, lemon juice and then topping it with low sugar cinnamon and brown sugar packets of instant oatmeal mixed with butter and top it that way.....then bake it off till bubbly and golden brown.  Like Liz, I don't measure a whole lot.

The toppic eric talked about is pretty good -and can be used on pancakes etc as well.

I also like to cut peaches in half, dip in a solution of lemon juice and splenda, grill (either on a grill or inside on a grill pan) flesh side down, and top with sweetened lemon ricotta cream.

Great...now I need to go to the store and get some freaking peaches....

She had bypass in 2006 and posts 1000's of recipes.   Just search peaches in her search box and you will find some really good ones!

Thanks for all the suggestions. I ended up making something similar to Pam's idea with the instant oatmeal packets. I forgot about eggface's blog......I'll check that out. I'm sure I'll be trying more recipes over the next few days. I already froze 2 gallon sized bags of cut up peaches for later use.

I planned on making a homemade crumble, but realized I didn't have any oatmeal! I did however have a box of weight control maple and brown sugar instant oatmeal packets. I added cold butter to the oatmeal to make the crumble, put that over the cut up peaches and baked. It turned out pretty good, I think next time I'll add some cinnamon to the peaches.
