Thursday (It's the new Friday) Roll call
Well just a quick check in here for now.
Yesterday's plans got derailed. I did make the pierogie's, but not the stuffed cabbage. After the gym yesterday, Sacred Heart called and made me an offer I absolutely couldn't refuse. I went in from 1900-2330, got paid my nursing rate plus bonus $ for the four hours for doing basically a Tech's (aide) job. They had two techs call out so they staffed an extra nurse. Extra money, short shift, easy job. Who could say no? So, I ended up needing to sleep. Damn thing gets in the way all the time.
anyway - getting ready to leave here for the gym. Plan on doing cardio from about 7:15 - 8:00 then I have a trainer appt from 8:00-8:30
Showering and changing there....running errands afterwards which also includes going to a speciality shop to start looking for spin shoes. They supposedly really make a difference in spin class, and considering I've been going so often, I want to see how they work out. There's a few shops in the area that carry them, so I'm going to one of those first. Eric - if you remember, see if the store you go to has them for me? I have no idea what they are called....lol But have been told some bike shops carry them, but not all. Then it's to the grocery store to pick up the ingredients for the stuffed cabbage. On the top of the list - cabbage of course, lol.
Then home, making the cabbage and playing the rest of the day by ear. Hopefully checking in here to play some catch up!

Would you share your recipe for perogies? Gene loves perogies. The 53rd Devers family reunion is coming up I could make them for that. Gene's mom used to make them - she can't do it anymore, but won't share the recipe. I think its going to die with her, very sad that the tradition will not be passed onto the next generation.....

I had posted this to Trish on Wednesday - so here it is, along with the changes I made!
I made pierogie's for the first time a few years ago for my mom's mother's day gift. This is the recipe that I used, but I changed it a bit.

The changes I made were: No peas (who puts peas in freaking pierogies anyway?) and no ham, and I used cheddar instead of the Gruyere cheese, as that is a family favorite, potato and cheddar in our house. I basically just used the recipe for the dough....the filling and the cooking I just did "as normal"
Once they are made, I boil them in some salted water and then transfer to a skillet with some butter and olive oil and sauteed onions. My family used to use bacon fat, with the bacon of course, butter, and onions. On occassion I will use some turkey bacon now
When I made them for mom, I made the pierogies and then froze them and gave them to her that way so she could cook them up fresh.
They were pretty easy to make - except the dough was quite elastic and I found difficult to roll out to the desired thickness - it kept "snapping" back into place. I'm gonna let it rest a bit more this time to see if that helps.

Last night I tried my best to talk myself out of the knee surgery. It feels better now than it did. Does it feel better enough to go to an aerobics class? (No, but maybe soon...) Maybe it would be better if I'd never seen the orthopedist - maybe his twisting aggravated it. Maybe if I wear Dansko shoes for the rest of my life. But the truth is, I feel it again this morning and I know I need to get it done. I am not nervous about surgery, but don't feel really patient about the recovery part.

Had a mostly nice day yesterday. Hung out with Larry and my little brother in the morning, headed over for my pre-surgery vsit at the surgeon's office, came back for a little nap, then took the girls school clothes shopping, out to dinner just the three of us and then to see Ramona and Beezus. A very fun afteroon and evening! Turns out - on occassion, I DO like my girls....weird!
Today has me heading to Barix for more pre-admission stuff - I guess today is the blood work part and everything else they do - at this point, I am just going to close my eyes and let them do their thing and get me to Monday.....Wow - 4 days! (Well 5 if you include today that hasn't really started...I AM the math teacher afterall!) I have no other plans the rest of the day - going to come home, most likely straighten up the house - finish unpacking, fight with the girls to put their things away, take a nap, play of facebook and OH - and worry worry worry about Swede and Julia - well - actually - worry about their partners worrrying about them, Swede and Julia will be in VERY good hands. Swede is not going in until this afternoon - so we probably won't know anything until later tonight. I am not sure about Julia's time frame.
I have a super busy weekend planned - with two trips to Camp, and one to the Jersey shore.....should make for a very tired and happy surgical patient!

Heading out the door to the hospital in a few minutes. I'm fine, slept good last night, and am ready to go. Not so sure about Paul though! lol He'll be fine when he knows I'm ok. (Gave him instructions about passing along news for you guys.)
Hey Eric---does surgery in general warrant brownies, or is that just for people having plastics???
