Morning all,

I have really been enjoying the taste of ground chicken lately and wondering if anyone had some great recipes to try with it?

Hi we pretty much use it to make meatballs which we freeze. We will make the meatballs and serve it with different sauces. Say we want buffalo chicken, or Pesto, or BBQ.

I will see if I can find the meatball recipe that Liz used for them. I cannot remember off the top of my head

Buffalo Chicken Burgers

Ingredients
* 1 tablespoon butter, cut into pieces * 1 small red onion, 1/2 finely chopped, 1/2 thinly sliced * 2 cloves garlic, finely chopped * 2 tablespoons tomato paste * 1 teaspoon splenda * 1 tablespoon Worcestershire sauce * 1 tablespoon hot sauce, eyeball it * 1 1/4 pounds ground chicken * 1 tablespoons grill seasoning * 3 tablespoons extra-virgin olive oil Directions In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in splenda and remove from heat. Cool in a bowl, 5 minutes. Add tomato paste mixture, Worcestershire, hot sauce to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium-high heat. Cook patties 6 minutes on each side. You can make these as burgers or mini meatballs for a party

BBQ Chicken Burgers / Meatballs

Ingredients

  • 1 tablespoon butter, cut into pieces

  • 1 teaspoon sugar sub
  • 1 tablespoon Worcestershire sauce, eyeball it
  • 1 tablespoon hot sauce, eyeball it
  • 1 1/4 pounds ground chicken
  • 1 tablespoons grill seasoning
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons honey, eyeball it
  • 1 lemon, juiced
  • 3 rounded tablespoons sweet pickle relish

Directions

In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in sugar sub and remove from heat. You can also use it in place of beef or turkey in any recipe, meatloaf, meatballs, tacos etc. I prefer ground chicken over turkey any day

Here's a few quick meatball/burger recipes I've tried with either ground turkey or chicken.

Spicy Chipotle Burger (slightly spicy)
  • 1 pound ground turkey
  • 1/2 cup finely chopped onion
  • 2 tablespoons chopped fresh cilantro
  • 1 chipotle chile in adobo sauce, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 4 slices mozzarella cheese (or pepperjack)
 

Directions

  1. Preheat an outdoor grill for medium-high heat, and lightly oil grate. Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4-6 patties, depending on your preference.
  2. Cook the burgers on the preheated grill until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready.

Mushroom Blue Cheese Turkey Burgers

1 pound ground turkey
8 ounces fresh mushrooms, finely chopped
1 onion, finely chopped
2 tablespoons low sodium soy sauce
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup crumbled blue cheese

Directions

  1. Preheat grill for high heat.
  2. In a medium bowl, mix together the ground turkey, mushrooms, onion, and soy sauce. Season with kosher salt and pepper. Form into 4 burger patties.
  3. Lightly oil the grill grate. Place patties on the prepared grill, and cook for 10 minutes per side, or until well done. Top with blue cheese during the last few minutes.

Meatballs (slightly spicy)

  • 1 pound lean ground chicken or turkey
  • 1/2 teaspoon sea salt
  • 1 small onion, diced
  • 1/2 teaspoon garlic salt
  • 1 1/2 teaspoons Italian seasoning
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon crushed red pepper flakes
  • 1 dash hot pepper sauce (such as Frank's RedHot®), or to taste
  • 1 1/2 tablespoons Worcestershire sauce
  • 1/3 cup skim milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 - 1/2 cup seasoned whole wheat bread crumbs or panko bread crumbs (I usually only need 1/4 cup)
 

Directions

  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Place the chicken/turkey into a mixing bowl, and season with salt, onion, garlic salt, Italian seasoning, oregano, red pepper flakes, hot pepper sauce, and Worcestershire sauce; mix well. Add the milk, Parmesan cheese, and bread crumbs. Mix until evenly blended, then form into 1 1/2-inch meatballs, and place onto a baking sheet.
  3. Bake in the preheated oven until no longer pink in the center, 20 to 25 minutes.
Serve with your favorite marinara sauce
