Fourth of July Fare?

Ok...so it's my weekend and holiday to work...which means I am working Fri, Sat, and Sunday night.

Of course, us night shift people can't let a holiday go by without having a party of some sort!  So, Saturday night we are having a fourth of july "party" (fireworks to be provided by our clientelle, no doubt!)

Any suggestions on favorite dishes, patriotic themed food etc?  I have a few ideas but figured I'd come here for more!  They do NOT have to be WLS friendly...and/or I can adapt them if I needed to.....
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

How about one of your star-shaped cakes?  Maybe decorate it with red, white and blue, add some blueberries and strawberries.

Silly me!  TOTALLY forgot about that!  oooh, I also have a sandcastle shaped pan....that I decorate with graham cracker crumbs as "sand" etc...thanks!

What about deviled eggs? They are high in protein. I usually make it with light mayo and spicy mustard....

jerk chicken, teriyaki beef or lime shrimp kabobs....anything on a bob is party food, is it not??   red, white and blueberry parfaits?   Hey, jello shooters!!!!   You must have those little white pill cups around the ER....

Ahhh Jello shooters! LOL

I am working 12 on Saturday at the hospital. I am taking crock pot mac & cheese. I won't eat any. But one nurse was saying how she is going to miss baked mac & cheese at her family's gathering and I told her I could do a crock pot version and she asked if I would.

I like the deviled eggs idea because I could hammer those down all day and not feel guilty!

When life hands you lemons, ask for tequila & salt and give me a call!

Thanks guys!  All GREAT ideas!

I've been asked by people at work to bring in something "baked" so I'm doing a pound cake and a sour cream coffee cake.  Also bringing in fresh whipped cream and then some (splenda) sweetened berries.  The sour cream coffee cake with be made w/ greek yogurt instead of sour cream....and the pound cake will be made semi wls friendly (no sugar...the fat content...well...) so I can have a small piece.

Others are taking care of protein laden stuff, so it'll be good!
