I just "noticed" the last part of your post today..do you need malibu? I have PLENTY...the lushes that Brian and I are...have had the same bottle since before we moved into Easton, LOL I can drop some off to you if you need.....
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses. 

Question on the rum, is it an ingredient that is necessary? or something you thought to add?

Karen's ice cream recipies call for a little bit of alcohol to help prevent the ice cream from freezing rock solid in the freezer after it comes out of the ice cream machine. Absolutely necessary? Probably not..but you might have to let it thaw a little bit more? Not sure. I would, however, add some sf coconut syrup or coconut extract to bring home the coconut flavor in this particular batch, as that's also another role of the rum....

Gotcha, thanks Pam, the recipe sounds good and something I will be trying, with the sf syrup, which I just happen to have in the house. . .
