Pina Colada Ice Cream - slight EDIT
Yup...made ice cream today, and OMG was it yummy! Made up my own "recipie"....
1 can (14 oz) UNSWEETENED coconut milk (best results if chilled) (tid does have fat in it...but combined with the ff half and half, I think it's ok)
1 cup FF 1/2 & 1/2 (chilled)
1 cup splenda granular
3 tablespoons malibu rum (to help the ice cream from freezing rock solid in the freezer)
1 small can (8 ounces) crushed pineapple in 100% juice (NOT SYRUP)
Combine first four ingredients and mix well
Pour into prepared ice cream maker and freeze/mix per instructions, normally about 20 mins for soft serve. During the last 5 minutes, add in the crushed pineapple and juice
OMG, freaking AWESOME!
If I wasn't doing the pouch test, I would probably take some organic coconut and toast it with splenda in the oven and serve the ice cream with some toasted coconut...or even mix some of the organic coconut into it at the same time as the pineapple.
EDIT: Just as an FYI once in the freezer it absolutely did freeze pretty darn rock solid even with the rum in it. But, you leave it on the counter for a bit and it begins to thaw fairly nicely. The texture isn't super super rich and creamy..but that's due mostly to the ff half and half I believe. Still REALLY FREAKING AWESOME if I do say so myself!
