Today's plan...

B: Syntha-6, coffee
L: Chicken burger, broccoli slaw
S: hardboiled egg with hummus
D: Going to Bobby Flay's burger palace, so some kind of grilled meat with salad
S: ricotta with splenda and cinnamon

Hey Lesley!  I'd still love to have your recipe for ricotta ice cream!  I'm back into making protein ice cream and want to try your recipe!!

Sure! It's not an exact science -- it's basically 1 cup milk, 1 cup ricotta, whatever flavoring I'm adding (SF vanilla syrup, maple extract and walnuts, for example), then I add to the machine and let it churn for 15-20 minutes.  Except for the walnuts -- they get added at the very end so they don't get all smushed by the ice cream machine. 

I will take some more exact measurements this weekend and post -- a few people have asked me for the recipe.

That sounds pretty yummy!!!  Thanks for posting!!!  I'll have to give it a whirl!  I'm guessing the added extras, like walnuts, are probably similar to the measurements Eggface gives for added stuff.

Yup, for this size batch, I would add 2 or maybe 3 tablespoons of walnuts.  I adapted it from a recipe that my chef ex-boyfriend (yes, I lived with a chef for three years -- GO FIGURE!) used for mascarpone ice cream, but his recipe involved things like heavy cream, full-fat mascarpone, and of course sugar. Sometimes I can find part-skim mascarpone, but since I usually can't I just use ricotta.

Lesley's recipie sounds just fine as is...there is also a recipie on foodtv.com that I happened across the other day....Giada makes it.  Probably easily adaptable....

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

Alright...what I've had thus far today:

16 ounce decaf iced coffee w/ ff 1/2 and 1/2
Insides of a stuffed pizza of steak, tomato sauce, and some mozarella
2 string cheese
1 buffalo chicken burger

What I have for tonight at work:

Banana w/ PB
Greek yogurt w/ blueberries
Ricotta cheese w/ splenda and blueberries (I told you I had this fascination with them recently!)
Buffalo chicken burger with muenster, lettuce, on an arnold sandwhich thin
Carrots & Cherries
I also have 2 string cheese if needed
