     I had an AWESOME time today at your house.  Thanx so much for having everybody over.  I think that I may actually try to make those egg cups.  It looks easy enough for even me.  It was great seeing people I know and getting to meet other people from the board.  Looking forward to attending more cooking classes in the future.  Hoping to see some of you on Wednesday night out at Barix.  Have a good week.

It was truly a pleasure - great group today!  The egg cups are SO easy and quick!  And you can "get experimental" and use whatever type of meat you like with your eggs ;-)  Variations that would be good I'd think are corned beef, turkey, turkey bacon, canadian bacon, etc...

I'm glad you made it to cooking class today!   I'm not much of a cook, but I really enjoy the class.  It's great to be in an informal setting with people who "get it".  I hope you can get to more classes!

Concur, great class.  Glad I could make it.  Loved seeing old (not in age) and new and just some who's paths I hadn't crossed.  Here is the faux potato salad, but really can use any potato salad recipe and just substitute some cooled steamed cauliflower.

1 head cauliflower (steamed and cooled and cut into bite size pieces  --- idea is to make it potato salad consistency --- think mine were a little al dente but still good)
3 stalks celery chopped
1/2 green pepper chopped (I used red because I didn't have green)
1/2 a big red onion or 1 small red onion chopped
1 tbsp celery seed
3-4 tbsp chopped fresh dill (I grow it so mine was from my garden)
salt/pepper to taste
4 tbsp apple cider vinegar (adjust to taste)
1 container greek yogurt
same container filled with light mayo

mix all in big bowl, chill and serve

can add hardboiled eggs if that's how you eat your normal potato salad and that would add protein.  I didn't have any hardboiled so I didn't.
