recipes help with cottage cheese!

I have 2 containers of cottage cheese both go out of date in the next week any way to spruce em up alittle or add to meals? thanks so much!

Noodle-free lasagna
speghetti sauce
cottage cheese
ricotta cheese
parmesan cheese
turkey meatball
layer as you see fit and nuke til melted. YUMMO!

COTTAGE CHEESE JELLO DESSERT

1 pkg. any flavor Jello (orange, lemon, lime)
8 or 9 oz. Cool Whip
1 carton cottage cheese
1 (303) can crushed pineapple, drained

Drain pineapple, add to Jello. DO NOT add water to Jello. Mix and add cottage cheese.

Makes a more smooth mix if you whip cottage cheese. Mix in Cool Whip, stir by hand, DO NOT BEAT. Ready to serve. Can keep in refrigerator.


My Fruit Salad variation
4C chopped apples
2C halved grapes
1 can crushed pineapple
1 can sf mandarin oranges or equivalent
1 box sf vanilla pudding (or coconut, banana, etc.)
1 bowl sf cool whip
12 oz. cottage cheese

I wish I had ideas. I can't stand cottage cheese and have yet to find a way to use them in a way that tastes good to me. If you come up with anything, let me know!

Mock Calzone

1 Cup Cottage Cheese

10 oz. Box Spinach thawed and squeezed dry

10 oz. Hunts Zesty and Spicy Spaghetti Sauce

2 Cups Sargento Reduced Fated 4 Blend Italian Cheese

1/2 Cup Egg Beaters

Preheat Oven to 400 Degrees

Pre-treat a metal baking pan or dish that has a lip with canola spray oil (square or round doesn't matter)

Blend Cottage Cheese, Spinach, Egg Beaters, 1/4 cup of sauce, 1/4 cup of cheese well until tacky.  If not tacky add a little more cheese.

spread out evenly in baking pan (no holes or gaps) top with remaining cheese and drizzle with remaining sauce.

Bake at 400 for 20 minutes until cheese is golden and bubbly.

Allow to cool for about 20 minutes and cut into 8 servings.  Wrap up individual servings in aluminum foil and enjoy as a snack or with a salad.  Do not try to reheat the slices, they will not be firm enough to handle if hot or warmed.

 

This recipe works well without the cottage cheese also, just substitute the Hunts Sauce for Classico Spicy Tomato and Pesto.
