Its an altered recipe for crustless pizza

1 cup 2% cottage cheese

1/2 cup egg beaters

10 oz. Hunts Zesty and Spicy Spaghetti Sauce

10 box Spinach (Thawed and Squeezed Dry)

2 cup bag of Sargento reduced fat 4 blend Italian Cheese

 

Preheat oven to 400 degrees

Take a metal pan and prep with canola spray oil

 

blend cottage cheese, spinach, egg beaters, 1/4 cup sauce and 1/4 cup of cheese

Blend until mixture is tacky and evenly mixed

Lay out on your metal pan evenly, no holes or gaps, doesn't matter if round or square

top with remaining cheese and drizzle with remaining sauce

bake for 20 minutes or until cheese is golden and bubbly

remove from oven and allow to cool for at least 10 minutes

Cut into 8 slices and wrap each piece in aluminum foil

They are wonderful for a snack or lunch (don't reheat it, its better cold, its more solid)

 

If you would like to make the crustless without the cottage cheese use same recipe but instead of Hunts Zesty and Spicy use Classico Spicy Tomato and Pesto

Sure!  It tastes like a calzone without the crust. I love it!

Here's what I used:

1 lb ricotta
1 c. shredded mozzarella
1 package frozen spinach
2 eggs

I cooked the spinach, then added all other ingredients and stirred, poured it into a pie plate that I had sprayed with oil and cooked at 350 for 30 minutes.  I had marinara on the side for dipping. Very good!

No problem! I've also made it with different kinds of cheese and either sausage or deli ham added in instead of the spinach -- makes it more like a quiche. Either way I love it and it packs a good protein punch.
