Scallion Zucchini Latkes
Makes 12
2 zucchini, grated and squeezed dry
2 medium eggs, beaten
2 green onions, chopped
1/2 small onion, grated
1 tablespoon garlic, finely minced
1 teaspoon each salt and pepper
Nice Kimkins version of potato and zucchini latkes. Makes a very nice and filling breakfast.
Mix all ingredients well, let sit for a few minutes for flavors to circulate. Heat nonstick griddle on medium, spray with Pam (or wipe with olive oil).
Drop zucchini mixture by large cereal spoonfuls on the griddle. Coo****il set & lightly browned, about 5 minutes. Flip and cook 3-4 minutes on reverse. Garnish with a bit of sour cream or plain non fat greek yogurt for a protein kick.
Make a batch of these and freeze extras. Warm them up for a portable "kid snack"!
Tip: For breakfast I make large latkes, poke a whole in the middle like a donut & and break an egg. Cover, cook 7-8 minutes on low & serve!
