Just an idea, but I often Use the Arnold's Sandwich thins.

I will use only half, not top and bottom. For example, I actually made this for lunch.....

Half Arnold's thin, Chopped up Caribbean Jerk Chicken breast (left over from dinner last night), top with cheddar cheese and fresh salsa. Then I baked it in the toaster oven for about 5 minutes.

It was hot, gooey, yummy, low carb.....etc. and you save even more by only doing it with half the bread. Eat it with a fork, or pick up like a slice of pizza and eat.

I also do the exact thing with tuna, lunch meat and various cheeses. You can even lather a small amount of Pizza sauce and top with cheese if you have a craving for that.

It's a versatile standby for using up leftovers as a hot sandwich.

FYI, a toaster oven is great for making leftovers that involve meat, because the microwave makes meat rubbery and very dry when re=heating and that makes for a VERY painful pouch.

Mmmm  rotisserie chix with roasted red pepper and a bit o cheddar sounds like a plan for lunch tomorrow - I'll change out the toaster for the toaster oven :)  Thanks!

I'm going to TRY and whip up a batch of the sugar free, fat free ice cream and will bring it with me.  ALL depends on what time I get home from Philly on friday, but worst case, I'll whip it up Saturday morning and bring it in a "soft serve" state...

Siehara and I are definitely coming.

I "think" I will be making sauteed vegetable and lentil salad.  I'll make it Friday and it will have time to soak up all the yumminess of the dressing for Saturday.
