Here's a great-sounding recipe from sparkpeople... There are some really good variants on it in the comments, as well. I plan to make this tomorrow night or wednesday night.
I've made something very similar (Infact it was last month's cooking class I think - we stuffed it in mushrooms) the only difference is I add some sauteed onion
