Recipe (OMG good!): Strawberry ice cream

I think y'all are gonna love this one... very easy (no cooking) and quick, delicious, FAT FREE (but you'd never know) and no added sugar (just what comes from the strawberries themselves)...

Made it this afternoon and the bowl scrapings were amazing.  I used cassis liquor right at the end, which will keep it from being a rock-hard brick when it comes out of the freezer (more the consistency of store-bought).  It doesn't have an "icy" texture - very creamy and tastes like full-fat ice cream. 

I like the protein ice cream I posted before (from eggface), but this is SOOOO much better - tastes more decadent.  Not as high in protein, obviously, but it's a dessert, not a meal replacement. 

And, yep, look at the nutritional values on the darned thing... can you get much better than that for a dessert???

Maybe I'll make a batch of this when you guys come over for cooking class in May.  Hmmmm.

Ok ok...I'd make it myself but don't have an ice cream maker...and with my car and "loss" of a job, I'm not gonna buy one quite  yet.

Oh fine...I'll wait till May.

oh fine... I'll try and make a big batch for April's cooking class ;-).  And maybe a different flavor (peach anyone? or pineapple? or chocolate almond? or???) for May?

We had it tonight with fresh strawberries, cool whip light, and sugar-free choc syrup... HEAVEN.  The kids loved it, Eddie loved it, and as for me - it was just about better than sex!
