I must apologize for questioning you on how good the Spicy Vegetarian Meatloaf was.  I found protein crumbles and made it last night to bring some for lunch.  I was still skeptical though.  Meatloaf.  MEATloaf.  The mere thought of not adding a dead animal to this concotion gave me chills.  Even with all this skepticism, I made it.  I brought a piece for lunch today and it is awesome.  You don't even realize there is no meat in it.  I absolutely love it and will definitely make it again.  My only regret is that I only got one pack of protein crumbles and only could make one pan of it.  Erin and my grandmother loved it also!

In closing, you were right on with this one and I will never, ever question you again.

WOW.... What a gracious apology!  (I'm SO glad you loved it... it's become one of my favorites, too! and so many possible variations of what you can put in the middle of it... mushrooms, veggies, etc.)

Can't wait to meet you next week at cooking class.  I'm going to try really hard not to come down with any major diseases or disasters in my life this week.  ;-)

I *believe* the protein crumbles are in the refrigerated organic section...they are tofu maybe?

I use "Smart Crumbles" original flavor.  Company name is "LightLife" and they're in the produce section of pretty much every grocery store I've been in.  Packaging for the crumbles is a white box.  They also make an amazingly good chili product, and their taco/burrito mix is great, too.

You could use pretty much any vegetarian "ground beef" substitute.  I know Boca makes them, and have seen a few others in the vegetarian section of my grocery (can't recall the names, though - sorry!).

I have used these crumbles to make taco dip (taco seasoning, over cream cheese, topped with cheddar) and for "meat sauce" - my husband didn't know the difference! I told him of course (but later.. ;) )
