I was just figuring out how much artificial sweetener is in a recipe for Low Carb Cheesecake.

The recipe calls for 3/4 cup of Splenda for 12 servings. So since I only had packets of sweet 'n low and didn't know how many it would need I decided to open up enough packets to make 1 ounce.  The total packets were 24 for an ounce, so the recipe would need 144 packets to make 12 servings.  That means that each serving would have 12 packets of sweetener.

I thought to myself, if that doesn't kill you what would.  Holy bat crap, its not worth it.  Makes you wonder how many packets the lab rats ingested before getting cancer.

I know that 12 packets of splenda is equivalent to 1/2 c. of sugar, so I would assume the ratios are the same for Sweet n Low, so you'd only need 18 packets.  I got this chart from netrition.com when I was baking and only had packets on hand:

1/8 cup 3 pkts.
1/4 cup 6 pkts.
1/3 cup 8 pkts.
½ cup 12 pkts.
3/4 cup 18 pkts.

The recipe was written for splenda not sugar, so I still think thats a lot per serving to ingest

3/4 c of splenda granulated can't weigh anywhere near an ounce, so it seems to me that the calculation of 144 packets of sweet and low would be really "off"...  given that a packet = a packet in all the sweeteners, you'd be just fine with a total of 18 packets of sweet and low if the recipe calls for 18 packets of splenda NON-granulated (concentrated).  That's a packet and a half per serving of cheesecake, which isn't all that much to ingest.

I used a measuring cup to see how many packets an ounce was

I did not know there was a difference between granulated sweetener and the packets

Is there a difference between 3/4 cup granulated splenda and 3/4 cup maltitol?

When I thought about using the maltitol, the carb and calorie count was ridiculously high

Thanks for posting the chart, Lesley.  I knew I had seen one somewhere and finally found it on the Splenda website.  I knew the packets were sweeter than the granular but couldn't remember the conversion.

read both packages the granulated splenda in the big bag is different then the packets if the recipe calls for 1/2 cup of granulated splenda that is what u use. if u r using packets  then u only use 12 packets, it measure different u dont open all the packets to make 1/2 cup

Yes. The packets and the granulated are vastly different, as far as weight and volume.
