So this morning / early afternoon before I came to work, I took a roadtrip the Fleetwood, PA and went to Echo Hill Country Store.  I've heard lots of things about it, but have never been there.  It is literally right in the middle of nowhere.  I wouldn't call them a traditional health food store but it's like a country store with healthier items.  Lots of dry goods, spices, sugar substitute stuff, baking stuff, natural stuff, organic stuff, etc...  Their prices were really good too.  In reading different recipes here and on the web, I've seen different types of flour or grains and that TVP stuff.  They had all that stuff. 

Unfortunately they don't have a website, so you have to go there to get things.  Just wanted to share this little hidden treasure with you, since I know so many of you are WLS gourmets!  If anyone is ever in the Allentown area and wants to take a roadtrip out, let me know.  I will definitely go back.

I did.  I have jars, the seasoning, just need the pickles.  Not sure when I'll be making them.  I'd love to do it Sunday, but I don't think it is realistic.  Probably because I have no clue what I am doing...

WEll you need to buy the cucumbers - I wouldn't re-pickle pickles 

They are VERY easy - usually just slice up the cukes, mix up the mix, boil it and pour over the cukes in the jar. Jam the cukes in the jar tightly because they shrink as they pickle. You shouldn't have to boil the jars just keep them in the bottom, back of the fridge.

Is it really that easy?  No boiling the jars?  I am really clueless about this whole process.  You might get recruited for this project when I do it.  Do you know how to get to Schnecksville??

You should clean the jars but washing them in hot soapy water or running through the dishwasher (alone not with crusty dishes) does a great job. DO NOT wash the snap lids. Pickels are the easiest thing to can because of the vinegar - it kills the bacteria. Most of the mixes you get for them are for refrigerator pickles that are ready in a few weeks up to 2 months. The ones that you actually can you would boil but only until the lids snap - about 5-8 minutes.

I've canned tomatoes and fruit before as well as pickles and jelly. I have a few good books on it if you really get into it. Biggest thing is to make sure that there aren't any bad spots on anything that goes in the jars. You can cut away the bad sections and use the rest but any bad areas introduces bacteria to the jar. Also if you ever open a jar and there are bubbles or the lid has "popped" don't eat it - toss them. Not applicable to fridge pickles because the lids may not snap in the first place (they usually do if you pour the boiling liquid over and put the snap lid on quickly. I let mine sit on a cutting board or cooling rack and one by one you'll hear them snap shut.

OK 10 times more info then you wanted but what the heck - it's a friday afternoon and I don't feel like working! lol

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.
