1 Handed Taco Bite

1 Handed Taco Bite: Submitted by: Official Kimkins | Date Added: 10 Dec 2008 Ingredients:

Serves 8

8 1-oz extra thin sliced square deli ham
16 oz extra lean ground beef
1 egg, beaten
1 cup shredded lettuce
1/2 cup shredded low fat cheddar cheese
1 Roma tomato, chopped fine
1/2 cup salsa
1 pkg taco seasoning
1/4 teaspoon each black pepper & salt

Cooking Instructions:

How's this for a zippy breakfast idea! Make a big batch of these handy treats and freeze the extras.

On hectic mornings, nuke a mini taco cup & top with precut tomato, lettuce & cheese and GO! Eat the taco muffin while the car warms up.

Preheat oven to 425 F.

Treat a muffin tin with nonstick spray. Cut the ham slices in half and press them into muffin tins.

Brown the meat in a nonstick skillet and drain. Add spices and mix well. Let cool for a few minutes. Add egg & cheese and mix with ground beef. Spoon the beef mixture into each ham lined muffin cup. Top with the salsa.

Bake for 15 minutes, or until hot and ham slices are browned on the edges. Let sit 5 minutes before eating. Top with your favorite taco fixin's: lettuce, tomato & cheese. Enjoy!
