Breakfast
So I officially 3 months out and I wanted to try making some new items this week. Breakfast is the hardest meal for me and I found a low-fat recipe for Quiche Lorraine. I was so excited. I made it in little muffin pans so they were smaller portions and easy for in the morning. I liked them so much that I had them for Breakfast and then another meal that day. And lets just say my stomach didn't like this idea at all.
Do you think it was because of the eggs or just too much at once? And does anyone have any good ideas for breakfast/quick meals??
Thanks guys =)
I often have SF oatmeal at work because it's easier and more convenient. Or Muesli, I like that too. I've heard people say you can sprinkle unflavored protein powder on your oatmeal, but I have never tried it. Generally I start each morning with a protein shake or bar, so my breakfast (once I get to work) often isn't very high in protein.
Don't give up on eggs though, maybe your pouch just had an off day. Try them again but a smaller amount.
Good luck!
A lot of morning I have instant oatmeal for breaksfast because like Eric said it's convenient. I eat at work so I can just leave a box and a bowl there and make it when I am ready. You can also think about the 'unconventional' - who says that you can't have lunchmeat roll ups or leftover steak bits for breakfast? I do this quite often. If I am going to be on the road I'll pack bite size pieces of meat (chicken, pork, beef) in a zip lock with some slices of cheese and I'm good to go. You can flavor your mini quiches with anything - turkey bacon, cheese, veggies you name it!
It might have been the fat in the eggs if you were using "whole" eggs. Might want to try it with egg beaters as a substitute (1/4 cup = 1 egg) and only eat it for one meal. Some folks can't tolerate eggs early out, not sure why. Have any other eggs been a problem? (scrambled, poached?)
Breakfast is a tough meal for a lot of us. I work out before breakfast and go to work straight from the gym, so cooking a hot breakfast is not in the cards for me most mornings. I will sometimes have a muscle milk light (lactose-free protein drink) for breakfast, then follow with a mid-morning yogurt and muesli so I have some "bullk" in it. Other times, i have shrimp ****tail, a salad topped with shrimp, microwave an omelet I've pre-cooked the night before, have a protein bar, have some roast beef and lowfat cream cheese rollups, etc. In other words, "dinner for breakfast" which is just fine.
Unfortunately, I've totally lost my taste for oatmeal since surgery - used to love it. Still love it in "dry" form, just not cooked. Sigh. I'll try again in a couple of months and see if something's changed.
Hopefully, you'll get some ideas from that!

Have you tried egg beaters. I am 4 years out and a real egg feels like fingers going down my throat.
Somethings I like for breakfast are:
Spinach, Onion, Garlic & Egg Beaters Omelet
Muscle Milk 'n Oats Oatmeal used in place of flour for Pancakes
Recipe: 1/8 cup or 2 Tbsp. Muscle Milk 'n Oats Oatmeal
1/4 cup eggbeaters
1/8 cup 2% cottage cheese
1/2 Tbsp. DaVinci S/F Vanilla Syrup
1/2 Tbsp. Carey's Diabetic Pancake Syrup
1/2 Tbsp. Smuckers S/F Jelly
Blend everything together with an immersion blender and pour into a pre-treated (canola spray oil) omelet pan over medium heat and coo****il set and edges start to brown, flip and turn off heat. Should continue to cook in the hot pan for another 2 minutes. Don't make extra batter, it will lose its flavor if not used and consumed right away.
Frigo Cheese Head Lights (String Cheese)
D & W Smoked Turkey Filet (comes in a 7 oz. cryovac package) cut into 1 oz. servings.
Canned Salmon blended with fat free cream Cheese , spread on a soy cracker
Banquet Turkey Sausage (box says 3 is a serving) thats a little high fat, but 2 links work out good.
Hard boiled egg doesn't give me that queasy feeling like omelettes do, you may want to try it that way.
