OK Gang - here's the plan...

Cooking classes to be held saturday  3/20 (I know this conflicts if the stair climb thingy is happening but it is the only one I can do that month), and 4/17. I will then take a break for May and possibly June but REALLY look forward to getting back to it as soon as possible after the baby is born (so don't be surprised to see a June date pop up! I am sure a few of you might want to meet the  baby and all too)- afterall I'll be out of work and will have lots of baby holders to help out! :)

I'm making a cheeseburger pie thing if I can find the recipe again.  I know I have all the ingredients, but I have to figure out where I saw the recipe and print it out.

I made one....it was alright....I didn't follow a recipie - I kind of made one up

One onion, chopped
A can of condensed low fat cream of cheddar soup
A can of condensed low fat cream of mushroom soup
A squirt of ketchup and/or mustard
A dash of worcheshire sauce

Pre bake a pie shell until slightly cooked, but not brown
Brown the ground meat in a pan with an onion, add the rest of the ingredients until well combined.  Place in the partially prepared pie pan, top with shredded cheddar, and bake until cheese is melted and crust is done

Cheeseburger Pie

This is a basic recipe...you could add any sort of veggies, different meats, interesting cheeses to make it new. Think of your favorite burger and put those ingredients in. I topped mine with spicy ketchup and dill chips.

I've thought that a Teriyaki one with pineapple and red onions would be yum. A Cowboy burger with some pinto beans mixed into the meat and BBQ sauce slathered on top under the cheese. How about some blue cheese crumbled in and roasted garlic. Or do a Greek olive/feta combo. Use your imagination, kids!

Serve this with a fresh and crispy green salad and the family won't miss the BUNS!

Vegetable Cooking Spray
1 pound ground beef OR 1 pkg. Morningstar Crumbles
1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon olive oil (IF USING VEGGIE MEAT)
1/2 teaspoon oregano
1/4 teaspoon Adobo seasoning OR 1 teaspoon Taco Seasoning
3/4 teaspoon salt
1/4 teaspoon fresh black pepper
1/3 cup crushed cheese or buttery crackers (OR bread crumbs)
One 6-ounce can tomato soup, undiluted

Preheat oven to 350 degrees. Coat a deep dish pie plate with vegetable cooking spray and set aside.
Over medium-high heat brown meat or veggie meat (with olive oil) and onion and peppers. Drain if using beef. Stir in oregano, Adobo, salt, black pepper, cracker crumbs, and soup. Pour into the greased pie plate. Set aside.

CHEESE TOPPING

1 egg, beaten
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon dry mustard powder
1/2 teaspoon Worcestershire sauce
2 cups shredded Cheddar cheese (or any variety you like)

In a small bowl mix together the egg, milk, salt, mustard powder, Worcestershire sauce, and cheese. Pour over the burger mixture, spreading cheese to cover top completely. Bake for 30 minutes or until topping is set and golden. Makes 10 servings.

Per Serving: 293 Cal; 20 g Protein; 16 g Tot Fat; 6 g Carb; 0 g Fiber; 2 g Sugar; 297 mg Sodium

I have one that Chris' Mom used to make too - he LOVES it, Totally different though. can't wait to try this one.

There seems to be a "burger" theme going this month with your pie and my recipes. I think that the summer grill itch is getting to me! lol

Ok...so I'm now most likely coming!

Long story...I had contimplated calling out anyway...I am working in NJ Tue & Wed night.  And aparantly my brother is coming home with me on Thursday morning.  He "needs to get away" and feels "confused and distracted" at home.  Part of me gets really angry about this whole situation - the boy has everything HANDED to him on a plate and just won't see it for that.  So...he's gonna be at my house from Thursday - ??  So there is no way I"m going to work on Fri night cause I know he'll still be there, and by Saturday I will DEFINATELY need an escape from his whining!  Good thing Brian is so unbelievably good with him - AND that he talks to Brian!

So...I'll see all you fine people there!

I am coming.  Not sure about Erin.  It is all dependent on childcare for her.  I'm hoping we can both make it though, so she can meet all the other women in my life....haha.

Since I am new and don't really know you all yet, I will probably just contribute to the overall cause and not bring something.  Although I thought about making those stuffed eggplant but not sure.
