recipe: vegetarian meatloaf

As promised, I'm sharing the recipe - the vegetarian meatloaf turned out really good!  Definitely a keeper.

I made it spicy because we were in the mood for spicy tonight, but it would be pretty easy to adapt to be non-spicy if you prefer - just substitute garlic for the chili powder and add more onions, chopped pepper, celery and/or whatever you like in your meatloaf.

Once my computer let's me work on it at a reasonable speed I'll be looking at this recipie!
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

Seriously what`s a main dish without some blood and muscle?

Haha - try it and you might be surprised!  The texture and taste are very much like regular ground meat.  I've use the taco/burrito version of this (either by itself or mixed with some ground turkey or beef) in tacos and the family never noticed the difference.

Ok Karen, with much skepticism I looked at this recipe.  Meatless meatloaf?  Is nothing sacred?? 

So anyway... I'm thinking the recipe sounds like it might be pretty good though.  Where would I find those Veggie Protein Crumbles?  That's not something a regular grocery store would have, is it??  If I can find all the stuff, I'm willing to broaden my horizons by trying this out...

Yep, I know... if I hadn't had one that tasted really good at a local restaurant, I wouldn't have "gone there" with it, either.  But it really is quite good!

The veggie protein crumbles are in every grocery store I've looked (acme, genuardis, giant, and wegmans).  They are usually in the produce section in white boxes and packages - the brand is "LightLife" and they're called "Smart Food."  They make a really, really good vegetarian chili and I've also used the taco/burrito flavor in meatless tacos, as well.  The one I used for this is just called SmartLife meatless crumbles "original" flavor.

I had it again tonight for dinner and I have to say that the second day it was at least as good as the first day!

Try it - you might like it!
