whole wheat flour?
I have a few recipes that are calling for 1/2 cup of flour or less. I picked up whole wheat flour at the store last night because I'm not finding any almond flour and I'm not ready to order online yet. Has anyone tried whole wheat flour? Any tips, advice, or things I should know?

Hi Melissa,
Whole wheat flour (as with some of the other "alternate" flours) tends to be drier than white flour, so add a little bit of applesauce to the recipe to counteract that. if using 1/2 C of whole wheat flour, i'd add about a heaping tablespoon of applesauce in addition to whatever other oil the recipe calls for.
I also find that whole wheat has a very different taste than white flour... actually, each of the flours has a distinct taste, so play aroudn with them and see which ones you like for what things. Almond flour can be easily made by grinding BLANCHED almonds (not the ones with the skins on) in a blender or magic bullet until flour-like consistency. i've also found packaged almond meal or almond flour pretty easily in grocery stores (acme, wegmans), usually in the "organic" food section.
Some other good flours to try - coconut flour, garbanzo bean (chickpea), buckwheat...

It also can make things denser...but with 1/2 cup or less, I think it would be ok depending on the recipie.
For larger quantities, sometimes I sub some of the flour with whole wheat, although I have not yet embraced different flours completely.
