carbquick cinnamon rolls??

Someone posted a carbquik cinnamon roll recipe the other day with a picture - i can't find the post.   Could you please re-post or point me back to it?  They looked good and I meant to copy it inot my file and make them!

I was craving chinese food like crazy all weekend. I decided to make my version of sweet and sour pork with mushrooms, brown rice and edamame. I would have made cauliflower rice but I had enough wiggle room with my carbs. I actually only took a couple bites of the rice anyway!



Now for the big whammy..... DESSERT!
Take a breath...seriously...

Carbquik Cinnamon Pecan Rolls!

You can find the recipe at www.carbquik.com BUT I altered it because they called for a whole stick of butter and there was NO way i was putting that in these!

Ingredients:

Cinnamon Rolls:

1 2/3 cup Carbquik
1 Tbls Splenda
1/2 cup fat free half and half
1/4 cup softened light butter
1/4 cup brown sugar substitute (i used 2TBS splendabrown sugar and 2Tbs of diabetisweet brown sugar)
3 teaspoons cinnamon
1/2 cup nuts (Optional)

Icing:

1/4 block of cream cheese
1/3 cup UNSALTED Butter
3/4 cup Splenda
1 teaspoon vanilla

In a bowl combine Carbquik, 1 Tbls Splenda and mil****il moist. Let it sit for a minute. Stir again until well combined. Sprinkle some Carbquik on a kneading surface and turn dough onto surface.
Knead for approx. 3-4 minutes. Add more carbquik if necessary to keep dough from sticking.
Roll into a rectangle shape. (It helped me to roll only in one direction instead of back and forth.)
Spread butter over entire rectangle, then sprinkle with cinnamon and brown sugar substitute.
Roll up lengthwise and slice into 8 rolls.
Bake at 400 degreees for 20 minutes. Spread icing over top and serve warm!

Icing:

Whip on high speed for 2 minutes


The icing is optional and honestly theyre just as good without it but here are the stats for the rolls
For ONE ROLL without icing:
108 Calories
8g fat
7g carbs
4g protein

For ONE ROLL with icing:
145 calories
11g fat
8 carbs
4.5g protein.

I'd love to try to make these cinnamon rolls, but kneading dough and rolling out and stuff... just seems like a lot more work than I like to do.. LOL...

Maybe I'll give the recipe to Siehara and have her make them for me!!

Made these today for the first time - WOW, they're good!   I ground up some pecans and added to the rolls before rolling them up, then "basted" them with the left over i can't believe it's not butter, pecans, and cinnamon/diabetisweet mixture.  I found that I didn't need as much butter as the recipe called for, and that the proportions of the butter and cream cheese in the recipe seemed almost reversed- had to add more cream cheese to get the texture and taste right.

Otherwise perfect - first time i've used Carbquik and I really like it!  Yay!

Thanks for posting the recipe to whoever did it originally.
