Bananas Foster
Ok...so for some reason I have wanted bananas foster. Oddly enough - I very rarely ate it pre op...and haven't had even a thought of it for the past 2+ years.....but tonight I wanted it. Soooo...I played around. And OMG QUITE yummy. Definately still a "once inawhile" treat...not for your every day....but heck....
Servings: 4 WLS or 2 Regular (1/2 banana for WLS whole banana for regular)
2 tablespoons butter
3 tablespoons mallitol brown
Squeeze of fresh lemon juice
Sprinkle of cinnamon
2 bananas, quartered
Tablespoon of rum, or banana rum (I didn't have any banana rum on hand)
Melt butter in a nonstick skillet and add mallitol brown. Stirl until bubbly and smooth
Squeeze in lemon juice, and sprinkle of cinnamon
Add bananas and saute, turning in sauce, until bananas are slightly tender and well coated.
Remove pan from heat, add in rum, and return to low heat for just a minute or so
Using a candle lighter (something with a long handle, please) light the contents of the pan on fire.
Allow alochol to burn off
Serve as is, over greek yogurt, or NSA vanilla ice cream.

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

We used to make a variant of it with irish mist instead of the rum and with the addition of chopped nuts (pecans, walnuts, whatever you like). Haven't thought of it in years, but it used to be our "new years eve" special dessert over vanilla ice cream. Hmmm....
