Any Requests / Suggestions????????????
Hi Liz- oh my I was so heart broken when I went over to my mom's house yesterday and she had made my favorite- baked macaroni and cheese!! aahh I sooo wanted to put that in the blender and eat it- but I didn't!! So any ideas for making that more healthy, pre-op I would always use whole wheat pasta, skim milk and lowfat cheese- just wondering if I will be able to have that ever again? Also is pasta an issue for anyone? Thanks!

Here is a lighter version of Mac & Cheese. And it can be made with whole wheat pasta.
And as a side note, Pasta is not an issue for me at all. I just choose to RARELY eat it. I typically stick to lean meats and veggies and eggs and cheese.
However, I do splurge sometimes and pasta has never given me any belly troubles. It's just not a very good food choice.

Liz - pasta is an issue for a lot of people, I am not one of them unfortunately. You can try the dreamfields pasta and make the sauce like you used to. You can also sub in the miracle noodles (just don't cook them, top with the hot cheese sauce and eat), or sub spaghetti squash for the noodles all together.

Do you have a food processor? I use the "shred" attachement on my food processor and toss in the pieces in and let it shred or you could do it by hand on a box grater. The trick to cooking it is to do it fast, you don't want the cauliflower to get soft.
We made the reipce Lisa had posted a while ago for faux fried rice and it was awesome!

Liz, it's the cooking part. I normally boil my cauliflower or just use the steam bags of frozen stuff.
When I grate it from a raw, how exactly do I cook it? Boil it.
Oh, and once I made a cheesy tuna casserole, but used all cauliflower instead of noodles. EVERYONE loved it. In fact I made an extra one that is in the freezer.
