Dark Chocolate Cake Recipe

Great Find from Liz that I tried last night for my hubby's birthday cake. (Hubby is Diabetic and on a diet so this was a good choice for him)

No Sugar Added Chocolate Cake

  • 2 cups sugar (malitol  I used Nature Sweet)
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY'S SPECIAL DARK Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water ( I either microwave it or use the hottest tap water)

Directions:

1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

This looks like the recipe from the Hershey's cocoa box. I've made it and it turns out picture - perfect!

One word to the wise - careful of matitol side effects! I got very bloated and uncomfortable! (So the rest of the cake is in the freezer....to be portioned out v-e-r-y carefully!)

lol it is the one off of the can :)

Luckily I can have a slice without the malitol effecting me!

I also had a portion last night with no side effects but yes great warning for those who will try this out.  Malitol may cause issues for you.

I tried making this with Splenda for my father's birthday cake. (I've been experimenting because he's diabetic - I have a month to work on it.) It came out okay, but not great. I used the Hershey's recipe for icing for it and also used Splenda in that. I'm also having a problem trying to make sugar free brownies for my husband. Does Splenda not react well with Hershey's cocoa or something?

I have found that Splenda only really works in 'wet' recipes.  NOT cakes and cookies.  I use Nature Sweet (malitol) for those and it makes a HUGE difference.  But that is just my experience.

If you are going to use splenda try adding a 1/4 cup of applesauce to the recipe. Also malitol is an amazing thing - it comes under different brand names - Nature Sweet I think might be one of them ( I don't have a box to check) - ALSO Malitol comes in powdered, granular and brown to suit all your needs

I tried this using Splenda and a 1/2 cup of applesauce and it came out perfect! So perfect, in fact, that my sister's diabetic boyfriend has asked me to make him a vanilla birthday cake with vanilla icing. I'm looking online, but I'm learning fast that you're the "go to" girl and was wondering if you had any recipes?
