Why spend $ for store bought low carb candy? Try this easy recipe and you'll always have a guilt free treat on hand.
2 packets Knox gelatin
10 oz Crystal Light or flat diet soda
4 oz boiling water
1 packet artificial sweetener
Mix gelatin and boiling water in a heat proof bowl. Stir for 60 seconds until gelatin is melted. Check the spoon, there should be no granules. Let bowl sit on the counter for 20-30 minutes until lukewarm, then add sweetener and Crystal Light or diet soda. Stir to mix and pour into heart candy molds. Place in the refrigerator for 1 hour or until set. This method gives a much better flavor than heating all of the liquids to boiling which destabilizes the aspartame. Make a double batch so you've always got a healthy snack.
