Szechuan Ginger Beef

KIMKINS SZECHUAN GINGER BEEF  Serves 4
Who doesn't love delicious Chinese food with friends?  It doesn't get any quicker than this!  Using a steel wok gives a smoky touch of Szechuan authenticity.
  • 16 oz flank steak, trimmed of all fat
  • 1/2 cup red bell pepper, thinly sliced
  • 1 green onion, sliced
  • 1 tablespoon olive oil
  • 2 tablespoon lite soy sauce
  • 1 tablespoon garlic, minced
  • 2 teaspoons ginger root, finely grated
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 1 small red chile, seeded & sliced (optional)
Slice beef into bite size 1/2" slices. Set aside.  In a steel wok, add olive oil and saute bell pepper, ginger, green onion bottoms, garlic and red chiles for about 2 minutes.

Remove veggie mixture to warm serving bowl, add soy sauce & sesame oil to pan and add beef slices. Cook quickly over medium heat flipping frequently. Return veggie mixture to beef and mix well. Check for seasoning, garnish with green onion tops and serve!
