Recipe??? SF chocolate chips and cream cheese
I saw a recipe and saved it and guess what now I can't find it. Big surprise huh? LOL Anyhow it was for a chocolate truffle thing, Cream cheese and melted SF chocolate chips, cool for two hours, shape and roll into nuts, coconut, or whatever. I don't know. I just wondered if I am missing any ingrediants or steps. Thanks to whoever knows the answer. Really want to make these for tomorow night. Belinda
you've basically got it down... but here it is.
Sugar Free Truffles
8 ounces cream cheese; room temp
8 ounces sf chocolate chips
Toppings of choice (suggestions: Chopped nuts/sf instant pudding powder, unsweetened cocoa blended in food processor with splenda/unsweetened toasted coconut/PB2)
In a medium bowl, beat cream cheese with an electric mixer until light, fluffy, and smooth.
Melt Chocolate chips over a double boiler
Combine melted chocolate with cream cheese and blend with mixer until well combined
Place in refrigerator until set, at least 2 hours
Roll into bite size balls and then roll in coating of choice.
Keep refrigerated until serving time Made these tonight and they were really YUMMY! I made one change - added 1 tsp vanilla extract to the cream cheese while I was "fluffing" it in the mixer.
I rolled it in 3 different coatings (split the batch into 3) -
- unsweetened coconut mixed with a little splenda
- Unsweetened cocoa powder mixed with a little splenda and PB2
- Unsweetened cocoa powder mixed with ground hazlenuts and a little splenda
Wow. They're GOOD! I'll be taking them to my in-laws tomorrow as a 'safe' option for me. But I have a feeling everyone will love them regardless of their SF status.
