Recipe for sugar free ginger snaps?

My step-father is diabetic and loves ginger snaps.  (Ok, I'll admit it---I like them too.)  At Thanksgiving, he and I looked high and low for Murray SF ginger snaps, or any brand, but we couldn't find any.  Does anyone have a recipe for them?  For some reason, it never occured to me till just now that I could make them for him.  I'll google for recipes but thought I'd ask here since we have some awesome cooks/bakers around here.

I've never made ginger snaps...regular or sf.

Do you have malitol?  I have found that malitol works almost perfectly in just about every recipie...so find a ginger snap recipie and sub the malitol.

Thanks, Pam!  That's what I was thinking of doing.  I bought malitol after reading so much about it on here.  I'm looking at recipes now and will probaby pick one to try this afternoon.

I did pick a recipe to try, but I haven't baked them yet.  The dough has to chill for a few hours first, so I stuck it in the fridge last night, along with a batch of Liz's oatmeal cookies.  I'll bake them later today and will let you know how they turn out.

i have never seen them up here, only in NC at Wamart have i found murray sf ginger snaps

I picked a recipe online for ginger snaps and used malitol in place of sugar.  Mixed them up Sunday night and baked them this morning, and they're really good.  Can't tell they're sugar free!  I used light butter in place of shortening, too.  The dough was really sticky; not sure if that was because of the butter.

I also made a batch of Liz's sugar free oatmeal cookies, and they're so good they're almost sinful!
