Oven-Fried Chicken Chimichangas
from Campbell's Kitchen

Ingredients:
2/3 cup Pace® Picante Sauce
1 tsp. ground cumin
1/2 tsp. dried oregano leaves, crushed
1 1/2 cups chopped cooked chicken
4 oz. shredded low fat or reduced fat Cheddar cheese  (about 1 cup)
2 green onions, chopped (about 1/4 cup)
6 (8-inch) flour tortillas (use low carb wraps)
2 tbsp. butter, melted (use butter flavored spray type)
fresh cilantro leaves


Directions:
Stir the picante sauce, cumin, oregano, chicken, cheese and onions in a medium bowl.

Place about 1/2 cup of the chicken mixture in the center of each tortilla. Fold the opposite sides over the filling. Roll up from the bottom and place seam-side down on a baking sheet. Spray with butter.flavored oil.

Bake at 400°F. for 25 minutes or until they're golden brown. Serve with additional picante sauce. Garnish with cilantro.

Tip: For 1 1/2 cups chopped chicken, in a 2-quart saucepan over medium heat, in 4 cups boiling water, cook 3/4 pound boneless chicken breasts or thighs, cubed, for 5 minutes or until the chicken is cooked through. Drain and chop the chicken.

Serves 6.

These sound really good!  When you say "use low carb wraps" do you mean like the Flatout wraps?  or did you have something else in mind?

I found Toufayan Brand low carb wraps on netrition.com they are as follows:

Calories 140, Fat 3, Carbs 15, Fiber 8, Protein 13, Calcium 20%, Iron 8%

Have you tried the Flatout wraps?  I get them at Wegmans and I think Giant may also carry them:

Calories 100, Fat 2.5 (0 sat), Carbs 17, Fiber 8, Protein 9, Calcium 2%, Iron 8%

A tiny bit higher in carbs and lower in protein, but easily "accessible" and very tasty with good texture.  That's from the "Multi-grain with flax" variety.  I also like the "light original" and light italian herb varieties.
