A Healthy Hanukkah Latke

Hanukkah, an eight-day Jewish holiday that commemorates the rededication of the Holy Temple in Jerusalem, begins this week. To help you celebrate, we gave the traditional pancake latke recipe a makeover, using South Beach Diet-friendly ingredients like heart-healthy canola oil, sweet potatoes, and zucchini. This healthy latke recipe is sure to bring joy to your holiday table.

Sweet Potato and Zucchini Latkes (Phase 2)

Description
Our twist on this Hanukkah favorite yields a crispy and slightly sweet pancake. Prepare the batter right before cooking to prevent excess liquid and soggy cakes; pour off any excess liquid while cooking if you need to. These lacy latkes are delicate, so don’t press down too hard on them once they’re in the pan.

Make-Ahead: Latkes can be made up to 6 hours in advance and kept covered at room temperature. Reheat on a baking sheet (preferably dark-bottomed) at 375°F until warmed through, about 5 minutes.

Prep time: 10 minutes
Cook time: 10 minutes

Makes 24 (2") latkes

Ingredients
1 medium zucchini (1/2 pound), ends trimmed
1 large sweet potato (3/4 pound), peeled
1/4 cup minced onion
1 large egg, lightly beaten
1/4 teaspoon salt
1/3 teaspoon freshly ground black pepper
3 tablespoons canola oil
Unsweetened applesauce (optional)

Instructions
Slice zucchini lengthwise and remove seeds. Coarsely grate zucchini and sweet potato in a food processor or with a hand grater; transfer to a medium bowl. Add onion, egg, salt, and pepper; stir to combine.

Heat 1 1/2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Working in 2 batches, add zucchini mixture by heaping tablespoons to skillet, gently flattening with the back of the spoon as you go. Coo****il the edges are golden, 1 to 2 minutes, then flip and coo****il bottom is golden, about 1 minute more (adjust heat if necessary to prevent burning). Drain on paper towels. Repeat with remaining 1 1/2 tablespoons oil and remaining zucchini mixture. Serve latkes hot with applesauce on the side, if desired.

Just thought I would share. I get recipes from South Beach Diet....not always workable, but most can be worked out to be passable...here goes:

Now use Greek Yogurt instead of Sour Cream , and use SF applesauce....

Steve the kugel I USED to eat had noodles and different kinds of cheeses. Ho hum guess I will have to ask the ladies if they have any other suggestions but thanks so very much for trying I appreciate it.

Linda - swap out shredded zucchini for the noodles. We did this at a cooking class in the spring for (oh my Jewish girls help me! lol) Oh it was Passover!

Oh Liz my Mom's maiden name is Segal not much more jewish than that and you take after your mother's religion according to jewish law.  I so hate zucchini so I shall pass but thanks for the info.

That sounds like a good one.  I am having people over for dinner twice and I was going to do baked potato latkes one night and zucchini latkes the other night.  Maybe I'll switch out the zucchini ones for these.  I need to stick with the potato ones for Monday because there will be picky eating kids here.
