Need recipies for SF chocolate and vanilla cake
It is my mom's birthday, and we are throwing her a surprise party this Sat. She is the director at a personal care home and has to work that day so we are taking the party to her and her residents. We want to make a Half chocolate half white/vanilla SF cake so that the diabetic residents can have some too. (and me I want some SF cake) Anyhow this is the best place I could think of to get some recipies and or ideas. Thanks everyone. Belinda

IS a yellow cake ok?? THis is the best one I have found - oh and don't worry, you don't taste the pineapple at all!
1/4 cup butter, softened
2/3 cup splenda granular
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup 1% milk (you can use skim too - or soy)
1/3 cup pineapple juice
PReheat oven to 350 degrees. Coat (1) 8" round cake pan with non-stick spray.
In a medium bowl using an electric mixer cream butter and Splenda. Add in egg and vanilla.
In a small bowl sift together dry ingredients.
Alternate mixing dry and liquid ingredients into creamed mixture in 3 steps.
Pour batter into prepared pan - bake 25-30 minutes or until top springs back when touched. Cool in pan on wire rack.

The recipie liz posted looks great - but I second her first idea of sub malitol (or diabetisweet) The malitol is wonderful. You might not get it in time for this party - but you may want to look into ordering some and keeping some on hand for such occassions!
