looking for the jimmy carter cake recipe

 Wow!  You brought back wonderful memories---so i searched for the recipe and foound my copie form many years ago---it's quite easy to make it WLS friendly.

1st layer:
2/3 c. finely chopped dry roasted peanuts
1 c. flour
1 stick margarine
Blend together, pat into a 9x13 in. pan and bake for 20 min. at 350. Let cool

2nd layer
1/3 cup creamy peanut butter
8 oz. pkg cream cheese
1 cup confectionary sugar
1 cup Cool Whip (buy a large size)
Blend peanut butter and confectionary sugar and cream cheese.  Fold in Cool Whip. Spread on cooled crust

3rd layer
1 sm pkg vanilla instant puddin
1 sm pkg chocolate instant pudding
2 3/4 cups milk
Mix together and spread on peanut butter layer

4th layer

Top with remaining Cool Whip and grate a  plain Hershey Bar on top.

I googled Jimmy Carter Cake for you.  And also because I was curious what it is!  Here's what I came up with.  It's not sugar free, but you could easily substitute SF puddings, and I'm assuming powdered malitol would work in place of the powdered sugar.

JIMMY CARTER CAKE  

 

1 stick butter, soft
1 c. flour
2/3 c. ground nuts
8 oz. cream cheese
1 c. powdered sugar
1/3 c. peanut butter
1 c. Cool Whip (8 oz.)
1 sm. pkg. chocolate instant pudding
1 sm. pkg. vanilla instant pudding
2 3/4 c. milk
1/2 c. crushed nuts (opt.)

 

Mix first 3 ingredients like pie crust and press with fingers into bottom of 9 x 13 inch pan and bake at 350 degrees for 20 minutes. Let cool. Blend next 4 ingredients until smooth and spread on top of cooled crust. Beat chocolate and vanilla pudding and mil****il thick. Spread on top of second layer. Spread remaining Cool Whip on pudding layer and sprinkle with crushed nuts. Refrigerate 1 hour or until cold.

Interesting...I had never heard of this - I might need to try it one day!
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.
