Brownies!

Well...I played around with my moms recipie for brownies using the malitol sugar sub.  Oh boy!  I did have to add an egg to it as I knew right off the bat the way it was supposed to look and the way it did look - very dry.

Apparantly they are pretty good because I brought a whole pan (well..minus the few we taste tested at home, LOL) to Liz's and I brought 0 left overs of that home!

4 ounces unsweetened baking chocolate
2/3 cup shortening
2 cups malitol sugar sub
5 eggs
1 teaspoon vanilla
1 1/4 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
*optional* 1 cup chopped nuts, sf chocolate chips, or any other addiction you would like.

Heat oven to 350
Grease baking pan, 13x9x2 inches or line with parchment paper
Melt chocolate and shortening in large saucepan over very low heat.
Remove from heat as soon as it is mostly melted and stir gently to finish melting chocolate.
Mix in sugar sub until well combined, it will look grainy and slightly dry - that's ok - it doesn't have to be smooth
Wisk in eggs and vanilla
Stir in the remaining ingredients (flour, baking powder, salt, nuts etc)
Spread into prepared pan
Bake 20-25 mins (up to 30 but do NOT over bake, they will become dry and cakey and less brownie like) or until they start to pull away from sides of pan.
Cool slightly
Cut into bars, allow to finish cooling completely (they have a better taste and texture that way)
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

Oh they do sound yummy and I will be trying to make them soon. . .    one question, where did you get the malitol sugar sub (can Splenda or Equal be used?, or are they such subs?)  Thanks Pam.

Splenda CANNOT be used in these brownies.  That was an epic fail awhile back when I was desperate for them, LOL

The malitol sub is sold on the internet...both netrition.com and bariatriceating.com have it.  if you go to www.bariatriceating.com and go to their recipie section, their pumpkin roll uses the "crystals" as they call it, and there is a link to the one they sell.  HOWEVER, I believe Liz said that she found them on netrition and there is also a non name brand of it on netrition sensato or something like that even cheaper.

I haven't tried the equal sub.

Diabetisweet would also work...I have tried it and it does - but I can taste the aftertaste w/ diabetisweet (some can't) and I think it tastes horrible in this recipie.  That's just MHO, however.

Diabetisweet can be found in some Targets, Giants, and also online.

equal isn't really made for baking - OK for cold things though

Thanks Liz, I'm a good cook, but baking has not been something I've done in a very long time, so I can take all the helpful hints, so as not to waste time and energy as possible.  So feel free to let me know what substitutes work and what don't, I'll make myself a list and get it for my house.  They say good cooks can't bake, but I'm out to prove that theory wrong (lol). . .

Is that the entire ingredient list? Back in the 60`s we really liked "brownies". We were brownie connoisseurs.
