Going to the gym with my bf tonight - weights and elliptical. I loathe the elliptical but I am going to conquer it!!

Taking the advice I got at last night's meeting and mixing things up...

B: Weight Control oatmeal, coffee
S: 2oz. leftover filet mignon
L: green salad with salmon, homemade dressing
S: cantelope & a string cheese
Post- workout S: Skim latte
D: chicken, zucchini & tomatoes
S: ricotta somehow

No protein bars today.  :-)

Just keep changing it up and don't fall into a food rut, the scale will start to move.  You may suddenly see a big size change.  Try to keep your carbs as low as you can for faster progress.

Thanks, Nan, I appreciate your help.  I realized after I ate it that the weight control oatmeal was a mistake.  Too carby, and I could feel my blood sugar dip an hour later.  I'll stick with a more protein-rich breakfast now.

Try out Muscle Milk 'n Oats Instant Oatmeal Mix ---- I use it to make protein pancakes.  Here are a few recipes.

 

Mock Calzone (Crustless Pizza)

Preheat Oven to 400.

Ingredients:

Canola Spray Oil

2 Cup bag of Sargento 4 Blend Reduced Fat Italian Cheese

10 oz. of Hunts Zesty and Spicy Spaghetti Sauce

1/2 Cup Egg Beaters1 Cup of 2% Cottage Cheese

10 oz. of Frozen Spinach thawed and completely drained

In a mixing bowl combine spinach and cottage cheese with a fork till blended evenly, add the eggbeaters, 2 oz. of the sauce, and 1/2 cup of the cheese.  Continue blending till fully incorporated.  Turn out onto a metal baking pan that has been sprayed with the canola spray.  You can shape the mixture round or square, doesn't matter.  Make sure the mixture is of even thickness in the pan with no holes or gaps. Top with remaining cheese and drizzle with remaining sauce.  Bake for 20-25 minutes until cheese is golden and bubbly. Allow to cool before cutting into.  Its extremely filling, I suggest cutting into 8 servings.  Will hold up in fridge for at least a week.  I cut mine and wrap up in foil packets to take to work for a meal. Delicious Cold or Room Temperature.

 

Protein Pancakes

1/8 Cup Cottage Cheese

1/8 Cup Muscle Milk 'n Oats Instant Oatmeal

1/4 Cup Egg Beaters

1/2 Tablespoon Smuckers Sugar Free Jam

1/2 Tablespoon DaVinci's Sugar Free Vanilla Syrup

1/2 Tablespoon Cary's Diabetic Sugar Free Pancake Syrup

Blend all ingredients with an immersion stick type blender and pour into an omelet pan that has been pretreated with canola spray oil and cook as you would a regular pancake.  This recipe makes one serving.  DO NOT MAKE UP EXTRA BATTER, IT WILL LOSE ITS FLAVOR.

If one pancake is not enough for you, pair it up with a Morning Star Breakfast Patty or a Banquet Brown 'n Serve Turkey Sausage.

 

Mexican Bean Dip

1 bar (8 oz.) Fat Free Cream Cheese

1/2 Cup Plain Fat Free Greek Yogurt

1 Can Refried Bean1 Cup Pace Pico De Gallo Sauce (Jalepeno & Onions)

1 Envelope McCormicks Fajita Seasoning Mix

1 Cup Sargento Reduced Fat 4 Blend Mexican Cheese

Place all ingredients in a baking pan at 350 degrees until bubbly, (about 30 minutes), stir until cream cheese blends in.  Put back in oven for another 15 minutes at 375 until the mixture is golden and bubbly. 

Pair this up with Aldi's Taco seasoned grilled chicken breast. Taste better than Taco Bell without the guilt

 

Quick Protein Treat

1/4 of a 7 oz. D&W Smoked Turkey Filet with a Frigo Light Cheese Head Stick or a Mini Baby Bell Lite Cheese.

Morning Star Basil Pizza Burger with a cheese stick
