Not your typical Cookie Recipies

Ok, so a group of ladies want to get together and have an "Adult" cookie exchange. And I don't mean anything kinky............

I mean, we are each to bring a cookie made with an adult beverage of some sort. I see tons of recipies online for Rum Balls but that is so common. I was wondering if anyone had any other recipies for cookies of this type? Or maybe you have some free time to help me search the Internet? LOL

WLS friendly would be great as I always try to be the one who provides that. But if it's not, oh well. It's the holidays!

Found this for you...Haven't made them but I think I will try to...two favorites on board...choco chips and Frangelico...you can make them SF substituting the DiabetiSweet white and brown sugars, SF choco chips...and maybe 1/2 the flour with almond flour. 

Frangelico Coffee Chippers

1 cup brown sugar
1 cup granulated sugar
2 cups butter or margarine
1 1/2 tablespoons baking soda
1/4 cup Frangelico (hazelnut liquor)
1/4 cup Tia Maria (coffee liquor)
1 tablespoon salt
3 eggs
6 cups flour
1 1/2 pounds chocolate chips
4 ounces pecans, chopped
4 ounces walnuts, chopped

Preheat oven to 350 degrees F. Grease a cookie sheet.

Cream sugars, butter, baking soda, liqueurs and salt. While creaming, add eggs one at a time. Add flour, chocolate chips and nuts; mix well. Bake for 8 to 10 minutes or until golden brown. Store in an airtight container after cookies are cool.

I cut this out from my inlaw's newspaper. I found it to be a great dough to work with and it tastes great. Just remember the dough is easiest to handle if it is refridgerated overnight, so plan ahead.

24 cookies (change servings and units)

Change to: Close

Ingredients

Kahlua Icing

Directions

  1. 1
    Cream shortening, butter, and sugar together.
  2. 2
    Beat in egg until fluffy.
  3. 3
    Stir in molasses and Kahlua.
  4. 4
    Add dry ingredients to creamed mixture and blend well.
  5. 5
    Cover and chill for at least 2 hours but preferably overnight.
  6. 6
    Roll out to 3/8 inch, on a well floured surface, a portion at a time.
  7. 7
    Keep remaining dough chilled.
  8. 8
    Cut with cookie cutter and place on lightly greased cookie sheet.
  9. 9
    Bake at 350 degrees for 8 minutes.

    Let stand for 1 minute to firm.

    Decorate with Kahlua Icing.

    For icing combine all ingredients and tint with food coloring if desired.

    Pipe icing as desired.

    to make icing spreadable add 1 or 2 tsp more Kahlua.

Liz, those look yummy.

However on a 1-5 scale. These look like a 5. I am more of a 2-3 type baker!

But I know someone who would just love to make these, so I am going to pass it along! They sound delish!

Jack Daniels Brownies (OK so it isn't exactly a cookie.... close enough right??)

Ingredients

GLAZE

Directions

  1. 1
    Set oven to 350°F.
  2. 2
    Grease a 9-inch square pan In a bowl, sift together, flour, baking soda and salt; set aside
  3. 3
    In a saucepan, combine sugar, shortening and water; cook over low heat to a light boil. Add in chocolate chips and vanilla; stir until smooth. Add in eggs, one at a time, beating well after each addition. Add in flour mixture and nuts; stir well.

    Transfer mixture to a prepared baking pan.
  5. 5
    Bake for 25-30 minutes.
  6. 6
    Remove from pan; sprinkle with Jack Daniels Cool; top with chocolate glaze.
  7. 7
    FOR GLAZE: Melt the chocolate chips with butter on top of a double boiler or in the microwave; stir until smooth. Spread over brownies.

Oh and if you decide to do a cake I have a great recipe for southern comfort cake! Not sugar free but we could work on that!! I am guessing that most of the women aren't worried about that....

lol well I'll post it tonight and you can decide :) You can do it as cup cakes!

I'm wondering if you just add more flour if you can make them cookies... I'll look at the recipe.
